I had two goals for this dessert. I wanted to make a dessert that was heavier than a cake, yet lighter than a brownie; with less sugar than the average applesauce cake. I used agave syrup, blended stevia powder, and some homemade applesauce. It came out between a good brownie and a bread pudding; moist, but not wet. This recipe is dair-free, but not egg-free. Applesauce Sweetened with Agave (Naturally Gluten Free)
Do you have any apples that you do not want to waste? Make some delicious homemade applesauce with this easy recipe. You can make a great dessert with it, eat it plain, or even top your ice cream. My specific goal for this recipe was to make just enough applesauce for a gluten-free applesauce coffee pudding cake which I will post next. Gluten Free Carrot Cake (Sugar-Free)
This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)! It is adapted from a Carrot Cake Recipe thay used to be published on All Recipes website. Continue reading “Gluten Free Carrot Cake (Sugar-Free)”
Different Cannoli Filling – with a Twist
I just posted my Chocolate Potato Truffles Recipe and was pleasantly surprised to find the texture of the filling to be very similar to the traditional ricotta cannoli filling, but this filling contains walnuts. If you’re looking for different cannoli filings, this is a great alternative! Often one adds chopped pistachio nuts at the ends of the cannoli, therefore I used chopped walnuts on these. The walnuts in the filling make a good substitute for the chopped chocolate in the traditional cannoli filling, but you can also use chocolate if you wish. I have recently used gluten free chocolate mousse as a filling on Easter and everyone really enjoyed it. I’ve also used Orgran’s Chocolate Mousse and with added powdered sugar and cocoa. My husband loved it and I know the rest of my family went crazy over this one. I sent the photo below to my sister ahead of time to make her drool! It worked! Healthy Sugar-Free Gluten Free Chocolate Truffles
I was watching “Paula’s Home Cooking” on The Food Network channel the other day, and Paula showed how to make Chocolate Covered Potato Eggs (for Easter). Her recipe had a white filling and inspired this chocolate truffle recipe with walnuts I just created. My favorite See’s Easter egg has a chocolate cream and walnut filling, therefore, this is what I made today. I added cocoa powder and walnuts; substituted stevia and agave syrup for the powdered sugar; and changed its shape into the typical round truffle. This is a healthier truffle recipe than most. I dipped some in chocolate and froze them; rolled others in unsweetened cocoa powder; and others in walnuts. My husband found it hard to believe it contained mashed potatoes. Give this recipe a try. It tastes great and is so fun to make! Continue reading “Healthy Sugar-Free Gluten Free Chocolate Truffles”
Gluten Free Flourless Brownie Recipe
I decided to play around with a new gluten free flourless brownie recipe. Instead of using almond meal flour I used ground walnuts, which I ground in my food processor. I topped it off with my chocolate ganache that I use on my cheesecake. This recipe is flourless, rich and chocolaty! Enjoy! Continue reading “Gluten Free Flourless Brownie Recipe”
Gluten Free Cannoli Shells
Cannoli is a Sicilian dessert consisting of a crispy tube shell filled with sweet ricotta cheese filling. My aunt would make several variations for special occasions. You can add dried fruit, glazed cherries, pistachio nuts, or chocolate chips to the filling or use as garnish. They make you feel as if you were in Italy. Raw Almond Pistachio Avocado Ice Cream
This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Check out my recipe below. Continue reading “Raw Almond Pistachio Avocado Ice Cream”
Gluten Free Chocolate Chip Cookies – Blonde with Almond Flour – Drop Cookies
These gluten free chocolate chip cookies are wonderful! One member was in a panic when she couldn’t find the recipe. She said they are her family’s favorite gluten free cookies. One of my cookbook recipe testers rated them 10/10, excellent! Continue reading “Gluten Free Chocolate Chip Cookies – Blonde with Almond Flour – Drop Cookies”
Gluten Fee Strawberry Shortcake Ice Cream with Cookie Crust
Traditional strawberry shortcake recipes are made with layers of angel food cake with a layer of whipped cream or strawberries and topped with one of the same. I used a plain gluten-free cookie recipe to line a ramekin; baked it; and tossed it in the freezer for a couple of hours. Once frozen I made some homemade vanilla ice cream; added a layer of it on top of the cookie; then a layer of strawberries in syrup; then another layer of ice cream; topped it all with sweetened gluten-free whipped cream and slices of frozen strawberries; and froze.
