Naked Gluten Free Japanese Christmas Cake Recipe
In Japan, on Christmas Eve, they traditionally serve Christmas cake, made of sponge cake, covered in whipped cream and topped with strawberries. Sometimes it was decorated with chocolate or Santa Clause. It was a symbol of Western modernity and a high social status as they were expensive. Since it’s inception, these cakes have become affordable. They are also available in multiple variations, not just whipped cream and strawberries. Traditional Gluten Free Panettone Recipe
I recently made a large-size Gluten Free Panettone (pronounced pan uh tony) in an angel food cake pan. Panettone is a rich, buttery Italian yeast-cake prepared during the Christmas season. I usually make panettone more like bread than cake as I did in the above recipe link. That version has a crunchy crust, much like homemade bread. Gluten Free Panettone Recipe (Italian Christmas Bread)
Panettone is a sweet, light-weight, Italian bread containing dried or glazed fruit. Unlike fruitcake, it is not heavy. It contains butter, making it richer than traditional bread. I didn’t add tons of butter to this recipe though you may if you desire. I like mine to taste a little like bread versus dessert. Gluten Free Tiramisu Parfaits
One of my favorite recipes is tiramisu. These gluten free tiramisu parfaits combines some of my favorite fillings: vanilla pudding, cream cheese, and whipped cream with one of my favorite cakes, sponge cake. (The sponge cake is the same recipe I use in my Gluten Free Tiramisu Cake Recipe.) The espresso, or strong coffee, along with chocolate create traditional tirmasu flavor.
