Adapting my Whole Grain Gluten Free Dinner Rolls Recipe, enabled me to whip these gluten free hot cross buns up in no time. While the dough rose, I was able to make a delicious dinner. This gluten free hot cross buns recipe only takes about 10 minutes to bake. It all worked out perfectly and it can for you, too. These are so much less work than making Fluffy Gluten Free Cinnamon Rolls, though I enjoy those, as well.

I really needed a smaller size carrot cake, as my famous Gluten Free Carrot Cake Recipe is a bit too much for us lately. Using a 9-inch round pan versus an 8-inch makes for a lower cake, which fools us psychologically into thinking we’re still having a large piece. The main thing I changed in this new gluten free carrot cake recipe is making a smaller batter and making it moister and spicier. There was a bit too many crumbs on the recipe in the above link. This time, it’s perfect. A matter of fact, it is so good, you don’t even need frosting. It’s plenty of sweet and extremely moist. I used lots of ground cloves which I really enjoy and I think you will, as well. It tastes closer to pumpkin bread. If pumpkin spices are not your cup of tea, omit the cloves. Enjoy! Homemade Gluten Free Tortellini

After a few requests for a homemade gluten free tortellini recipe, I decided to make them. They are very much like ravioli, accept their crevices hold more sauce and they contain less filling. I suggest using a pasta maker for this recipe as it creates thinner pasta. I use the Marcato Atlas Wellness 150 Pasta Maker, as most serious pasta-makers use. (Don’t waste your money on the electric model as this dough is easy to handle and does not stick to the machine easily. I just roll it through and allow it to fall under the roller, accordion-style.) It is extremely difficult, at least for me, to roll the pasta thin enough by hand for tortellini. However, if you are not sure you will ever make pasta again, give the egg pasta recipe a try by hand. Then if you enjoy it, take a look at getting a machine. Meanwhile, my readers enjoy this pasta because it has a close to gluten-like texture, withstands reheating, even in soup, and doesn’t get mushy. Enjoy! Gluten Free Cheese and Spinach Gnocchi

Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!

I used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. I have been craving a good bread bowl, which I have not mastered yet. Instead of making my own, I used a gluten free ciabatta roll made by Schar. They are light and have a wonderful texture. I developed a soft gluten free dinner rolls recipe made with rice flour quite awhile ago. That recipe can also be made dairy free, if desired. I used buttermilk in that recipe. The recipe below, is more substantial as it has more structure. Though light in weight, it is not as light as the dairy-free version. With the use of buttermilk, they are a creamy goodness that my husband and I couldn’t stop eating at just one this afternoon. Enjoy!
