Gluten Free Taco Zucchini Boats (Turkey or Beef)
Having picked up a couple of 1-1/2 pound packages of ground organic turkey at Costco, I wanted to create a new flavorful recipe using one of them. So, I created these gluten free taco zucchini boats. While making these gluten free butter cookies, I accidentally browned them a bit too much. I had to think of how to hide my error, and this was my solution. They turned out so delicious, I couldn’t wait to make more. They’re similar to my Gluten Free Girl Scout Samoa Cookies, but they’re sandwich cookies instead, which balances out the sweetness.
