I had plans on making gluten free macaroni and cheese and then had the idea that adding some broccoli would be a great combo. Then I got carried away and decided to through the some chicken breast fillets in at the bottom of the baking dish. It made the chicken very moist, and delicious. I hope you enjoy this recipe. Gluten Free Chicken Recipe: Broiled Honey Mustard Fillets

I’m in love, and I’m not referring to my husband. I’m in love with this honey mustard gluten free chicken recipe! I was was in a rush and need an easy gluten free chicken recipe that was low in fat and dairy-free. It was wonderful! It is similar to orange chicken, without the orange. If you’re not dairy-free you may also enjoy my Gluten Free Honey Yogurt Chicken Recipe which is also very good; and less sweet and a little creamy. However, this gluten free chicken recipe is a bit more gourmet, as it calls for white wine and other flavorful additions. Baked Chicken Thighs Recipe (Gluten-Free)

I really had to dig deep in the memory banks for this baked chicken thighs recipe, and I’m so glad that I did. It was delicious! I haven’t made it in years, and I came to realize there really isn’t much to this recipe at all. I was at my Dad’s last week and though he has limited gluten free ingredients and supplies, I am usually able to whip up most basic recipes. This really is an easy gluten free recipe. If you’d like to make it lower in calorie, substitute some of the butter or buttery spread for a bit of gluten-free chicken broth. Enjoy! Dad did!

Gluten Free Casserole: No Egg Chicken Carbonara

I broke all the rules in making carbonara. Thus the title, “Gluten Free Casserole”.  I used penne pasta, no egg yolk, mozzarella instead of Parmesan, and more.  It is so yummy! You can make this an easy recipe by using pre-cooked gluten-free crumbled bacon. This dish has a gourmet flavor, as I used a bit of white wine. However, you can substitute the wine with additional chicken broth. Add veggies, if you desire. I am looking forward to trying this gluten free casserole with fresh baby spinach. Gluten Free Cream of Chicken Soup Recipe

This gluten free cream of chicken soup recipe is made with fresh ingredients. Add to other soups for an easily digestible protein. Using chicken breasts is not recommended, as it is too dry and creates a gritty texture. Brown chicken parts add more flavor. Ensure that the chicken broth you use is gluten free, or use the broth/water used to boil the chicken, though it will not have as much flavor as pre-made chicken broth. Enjoy this gluten free cream of chicken soup recipe. My father most certainly did!

Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! Gluten Free Empanadas

Empanadas are a popular pastry found in the Caribbean, the Philippines, Latin America, Portugal, and Spain. The fillings are typically gluten-free. They are filled with various ingredients, whether sweet or savory, depending upon which part of the world they are made. They tend to be on the dry side, therefore, I used a rich creamy, flaky dough in my gluten free empanadas. Adding a juicy filling is advised, however, it will most likely leak out of the pastry dough and burn while baking. Cheese is a common ingredient in savory empanadas to avoid this dryness, and prevent leaking. You can add ground meat: chicken, beef with cheese, or plain cheese, along with sauteed vegetables and spices. If you find them dry you can make a dip, as well -an avocado dip, salsa, sour cream, etc. This gluten-free recipe is made on the Argentina flavor side, yet a little different. What type of filling will you make? Check out the different types of empanada in different parts of the world and choose your favorite or experiment! You’ll enjoy making gluten-free empanadas because you can be so creative!
