Make this perfectly spiced chicken tagine stew with traditional lemon juice and tomatoes or with my suggested substitute ingredients. Using chicken thighs, legs, or breasts, its combination of spices is something you will surely enjoy. This is an African recipe usually made in a tagine (the stoneware that is used to cook this delicious stew). Instead, you can use a skillet or Dutch oven. Add or omit dried fruit or even vegetables. Make it your own! I provide several suggestions. Continue reading “Stovetop Chicken Tagine (With Lemon and Tomato Substitute Options)”

Thyme Roasted Potatoes and Peppers and Onion – Oh My!
I love this recipe for fingerling potatoes for a few reasons. I don’t have to peel the potatoes. I don’t have to slice small potatoes. The best thing is that they are incredibly delicious. I even surprised myself. I make them every chance I get! I can even eat them while on the Weight Watchers diet! We enjoy these potatoes more than mashed potatoes, and that says a lot. Schar Gluten Free Multigrain Bread Recipe for the Oven
Schar makes a wonderful, Gluten Free Artisan Baker Multigrain Bread. However, it contains modified cellulose. I and many members avoid modified ingredients. My intention was to duplicate the bread as closely as possible without using modified, chemical, or artificial ingredients and that’s exactly what I did.

Gum-Free Gluten-Free Oat Bread or Sorghum Bread Recipe
After three attempts, I not only created a gluten free gum free bread recipe but also extended the shelf-life (countertop life) to about three days. Its texture and flavor are wonderful. I created this recipe because xanthan gum and guar gum causes a laxative effect for one of my cookbook recipe testers. I’ve heard this from other people as well. I already have this Glute-Free Paleo-Style Gum-Free Bread Recipe, but I wanted to create a gum free gluten free recipe based on my favorite gluten-free bread recipe, which is available to everyone. Give it a try!

Make Ahead Gluten Free Four-Cheese Spinach Frittata
Not only can you make this frittata in advance, but it is better this way! Just steam or microwave to reheat. Well, there are two ingredients in this recipe that change all of the rules, and neither is cream cheese. This gluten free frittata turns out moist and has a balance of flavors and textures. Gluten Free Pineapple Curd
Pineapple curd is my go-to filling when I want lemon curd, due to my citrus allergy. It’s delicious and compliments coconut extremely well as they are both tropical. Use this pineapple curd in cakes, cupcakes, pies, tarts, cookies, and more. As you can see in the photo, pineapple also makes a great topping for pancakes.
