Gluten Free Nanaimo Bars Without Coconut

Gluten Free Nanaimo Bars without Coconut

With the hot weather we’ve been having, I thought I would make a no-bake dessert. Nanaimo bars are a Canadian treat. I substituted the traditional packaged pudding (or packaged pastry cream, depending upon brand) with gluten-free cream cheese (just 2 tablespoons). You can always use your own homemade custard. Mothers and grandmothers used to make these for their kids beginning in the 50’s and 60’s, and some still do. I made them without coconut, due to food allergies. Shredded coconut is usually used in the bottom layer. I substituted coarsely chopped almond meal. You can use regular. I just ground my own. This is a special treat that everyone can enjoy because you can change ingredients fairly easily to allow for food allergies. Enjoy! Continue reading “Gluten Free Nanaimo Bars Without Coconut”

Fried Colored Potatoes and Onion

This dish is not only attractive, but very tasty, and naturally gluten free. If you are used to frying or roasting potatoes, adding a bit of chopped onion and/or garlic provides quite a bit of flavor. However, all three of these potatoes tend to have more flavor than brown/russet potatoes. Using colored potatoes is also very attractive in potato salad, as well. I picked up a very small bag of baby colored potatoes at Trader Joe’s. If you have one locally, you may want to check there if you can’t find them in your local supermarket. Watermelon Stars

Watermelon Cut-Out of in Shape of a Star

This is such an easy and fast gluten free dessert to make! Frost bottom edges with sweetened whipped cream, white frosting, or cream cheese frosting (all recipes below). You can also use canned whipped cream. If desired, add blue food coloring to frosting for decorative stars or leave white. I like to use natural food coloring made by Select Tea. It’s gluten-free and vegan. I left mine white. Adding a single blueberry on top and/or one in the middle of each decoration at the bottom brings color to this dessert. If you’d like, you can frost the entire top of the star and add multiple blueberries and/or other red berries, and skip the decorative frosting, or do both. This recipe can be made low-carb using sugar substitutes. This definitely makes a great 4th of July desserts, and definitely a conversation piece! Happy 4th of July to everyone in the U.S.! Gluten Free Rice: Rice-A-Roni Style Chicken and Broccoli

Gluten Free Chicken and Broccoli Rice-A-Roni

The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. We enjoyed it very much. The hubby said it was very moist and went back for seconds! Continue reading “Gluten Free Rice: Rice-A-Roni Style Chicken and Broccoli”

Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse

Raw Chocolate Mousse

Imagine a no-cook sugar-free chocolate mousse that is also gluten-free, dairy-free, sugar-free, soy-free, corn-free, vegan and more! – that takes 5 minutes to whip up! Of course, you’ll need to soak one of the natural sweeteners, but that just takes about 4 hours. What is that sweetener? Dates! If you’re diabetic or low-carb, use a bit of stevia instead. Inspired by a few of my Facebook friends, I decided to create more gluten-free, sugar-free recipes. I’ve been meaning to grill some fruit but haven’t cleaned the grill yet. Unexpected guests? This is sure to please, as well as a great conversation topic! You can be sure I’ll be creating several versions of this recipe in the very near future. Perhaps with strawberries and bananas (not avocado and strawberries because that will turn to a brown color), other fruit and added nuts, like macadamia nuts or walnuts. With summertime here, it’s great not to bake! Enjoy and stay healthy!

Gluten Free Cheddar Cheese Potato Chips Recipe (or Plain)

Homemade Gluten Free Cheddar Potato Chips

One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? Or would that cause the temperature of the oil to drop too much? I share my research below, but you can skip ahead to my successful recipe below for cheddar cheese potato chips. Gluten Free Stove-Top Chicken Potato Casserole

Gluten-free Chicken Potato Casserole

This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier!
