Being raised in a half Italian, Catholic family, surprisingly, I wasn’t familiar with Italian Easter Pie until I ran across a recipe couple of years ago. It contains a sandwich filling which bakes right inside the bread dough. I’ve had it on my list of to do’s ever since. I finally created a gluten free Italian Easter pie. The dough is much like flatbread or rustic Italian pizza. The filling is traditional using ricotta cheese, ham, and eggs. I hope you enjoy it. It’s perfect for an Easter brunch. I have been pretty happy with my gluten free grilled pizza as a decent substitute for the lack of gluten, until now. This latest masterpiece (yes, I’ll toot my own horn here), is amazing! It has an artisan bread texture and creates the traditional cracks on the bottom of the crust, just like New York-style pizza. Grilling or using a pizza stone (if not both) is ideal for creating a gluten-like texture, which gives off a gluten-like flavor. I have been waiting to have a light bulb moment, and I finally did. There is an Italian dessert by the name of cannoli that consists of a deep-fried pastry shells filled with sweetened ricotta cheese. I altered this traditional dessert and created a savory cannoli, perfect for an appetizer. I filled mine with creamy ricotta cheese, peas, and basil. You can either make this soy-free or dairy-free. Traditional Gluten Free Panettone Recipe

I recently made a large-size Gluten Free Panettone (pronounced pan uh tony) in an angel food cake pan. Panettone is a rich, buttery Italian yeast-cake prepared during the Christmas season. I usually make panettone more like bread than cake as I did in the above recipe link. That version has a crunchy crust, much like homemade bread. Gluten Free Chocolate Biscotti with Hazelnuts

I love these gluten free biscotti because they are moist. You can also make them dryer, if that is what you prefer. I’ve including baking instructions for both. However, they are not so dry that you have to have something to drink nearby. I like my biscotti closer to shortbread cookies, with just a little less butter.
