Fall is my favorite time of year. It follows high temperatures, often over 100 degrees Fahrenheit. That’s Central California living. We live about 25 miles south of the south entrance of Yosemite. Today was in the low 90s, but the overcast, gray skies inspired this gluten free lasagna soup. It is a perfect way to use up broken pieces of uncooked lasagna noodles. It is also a wonderful way to use leftover ricotta cheese. I had an entire tub that was about to go bad. Continue reading “Gluten Free Lasagna Soup”
Gluten Free Chicken Pasta Primavera
Chicken Pasta Primavera is a creamy casserole with vegetables, in this case, broccoli and mushrooms. The creaminess originates from Alfredo sauce, which is cheesy as well as creamy. All the ingredients are naturally gluten free except for the pasta. It’s delicious! Make it for your guests sometime and enjoy! Continue reading “Gluten Free Chicken Pasta Primavera”
Gluten Free Marinara Sauce Recipe
There are a couple of recipes that I make for my husband (not for me- I’m allergic to tomatoes) that I should use marinara sauce instead of bolognese (meat) sauce. I usually have a freezer full of bolognese sauce and tend to use it because it’s there, the meat makes it flavorful, and he enjoys it. However, I’m tired of fishing out all of the meat to use it in my Chicken Parmesan Recipe. So, I began experimenting this week with a new, flavorful marinara sauce. I’ve come to the conclusion that adding wine makes the the most flavorful marinara. I hope you enjoy this gluten free marinara sauce recipe.

Gluten Free Steak Pizzaiola
Steak pizzaiola is known for being simple. You can make it simply using steak, tomato puree, tomatoes, garlic and oil. Season it with salt and pepper; and you’re done. However, for a truly amazing flavor, make this recipe, instead. It only includes two additional ingredients and is worth it. Continue reading “Gluten Free Steak Pizzaiola”
Grilled Homemade Gluten Free Polenta

You can use gluten free polenta or yellow grits. See below for choice of brands. Enjoy! Continue reading “Grilled Homemade Gluten Free Polenta”
Gluten Free Arrabiata
Arrabbiata is a spicy Italian sauce usually served with penne pasta. Its strong garlic and tomato base with the potent heat may make you look angry. That is exactly what arrabbiata means, “angry”. Gluten free arrabiata can easily be made. Just be sure to use gluten free canned tomatoes (most are). Enjoy! Continue reading “Gluten Free Arrabiata”
Gluten Free Cannoli Pancakes
Cannoli is an Italian dessert, tubes of crisp pastry, filled with sweetened ricotta cheese. Ricotta makes the most incredible pancakes. Also sweetened with sugar, these gluten free ricotta pancakes may be made extra-fluffy or traditional. Top them with a fruit puree or pure maple syrup. (Some traditional syrups contain gluten.) Serve your gluten free cannoli pancakes for breakfast or brunch. Your guests will not only be impressed, but they’ll be trying to guess the ingredients. The best part is that’ll never know they’re gluten free. They truly add a new definition to gluten free pancakes. Continue reading “Gluten Free Cannoli Pancakes”

Spinach Ricotta Gluten Free Dumplings
There are a number of ways of making gluten free dumplings. There’s my Chicken and Potato Dumplings, Asian Dumplings (better known as potstickers), and now this Italian version, better known as gnocchi. However, these are lighter than my Spinach Ricotta Gnocchi. I made them for dinner tonight. They were a welcomed change. I love them atop a bed of cooked spinach, while my husband enjoyed them with marinara sauce. How you will serve them? Mmmm, how about with meatballs?
