Gluten Free Biscuits

I really wanted to make gluten free biscuits a little healthier than the traditional recipes. I did not use corn starch in this recipe, therefore it is corn-free, depending upon which margarine you use. I used Smart Balance Spread versus the traditional butter. I am looking forward to trying one of the Earth Balance Spreads, too. Other changes I made were substituting agave syrup for sugar; and instead of using buttermilk I used non-fat Greek yogurt. This recipe is not dairy-free due to the Greek yogurt, but Greek yogurt is more easily digested compared to regular dairy products. If you haven’t had biscuits since you started your gluten-free diet I believe you will find these biscuits very delicious! Baked French Fries Mozzarella and Gravy with Optional Beef Stew

I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Gluten Free Potato and Bison Casserole

As a gluten-free dieter one can eat just so much rice. That leaves potatoes! My mother used to make this dish for us for years on end. I hadn’t cooked it in years myself, but had all the right ingredients. She used to use beef and green bell peppers, but since I only had yellow, orange and red that is what I used. This used to be one of my husband’s favorites. I suppose I stopped making it as we got older and started watching our sodium content. We used to pour on the ketchup when we were younger. This used to be one dish my children would eat without any problems, too, even though it had something “green” in it! I hope you family enjoys this budget friendly casserole recipe. Gluten Free Italian Sausage Stuffed with Mashed Potatoes

Gluten Free Mashed Potatoes and Cheese Stuffed Italian Sausage

One of my husband’s favorite dishes is mashed potatoes and cheddar cheese over Italian sausages. It is a great way to use up mashed potatoes. It is not something either of us can afford to eat very often, as far calories are concerned, but 3 or 4 times a year I make this special treat.  It’s right up there with pizza for us! I was not planning on posting this recipe, but snapped a quick photo anyway (before the cheese melted), and then later decided why not!  Kids love sausages and adults.  My mother used to make it for our family for years. When she decided to start cooking low cholesterol dishes she started broiling the sausages, cutting back on the grease.  It’s delicious broiled, too – nice and brown! Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup. Gluten Free Walnut Butter Cups

I wanted to make gluten free peanut butter cups, but I do not eat peanut butter very often and the Trader Joe’s peanut butter my husband uses is made in a factory shared with wheat. So, I opted to create walnut butter cups instead. First, I created a walnut butter recipe sweetened with agave syrup, making a great peanut butter substitute. I share both recipes with you below. Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich!
