Pecan Stuffed Snow Peas with Creamy Smoked Filling

Image: Gluten Free Appetizer: Stuffed Snow Peas

The holidays are almost upon us which has inspired me greatly in creating new recipes, but specifically these stuffed snow peas. Besides using these as appetizers they are a great way to get your kids to eat vegetables, too! If you use cream cheese, of course, they will not be dairy-free, but there are alternatives you can use nowadays. If you have a nut allergy you can skip the nuts and fill them just with the cream cheese filling. This stuffed snow peas appetizer is one of the best appetizers I have ever had, but of course they contain many of my favorite ingredients! All this and they’re gluten-free!

Savory Fruit Salad: Mango and Dried Cherry

Gluten-free Mango Fruit Salad

Of course this fruit salad is gluten free, but it does not take special ingredients to make this recipe. It is fast to make, yet elegant to serve, with proper garnishes. October is mango season where I live in California. Perhaps the season is different where you are. Mangos tend to be overlooked during the fall, as many of our favorite fruits go out of season. I love the fall color of mangos, as well as their flavor. I hope you, and possibly your guests, enjoy this savory fruit salad recipe. My husband is not big on fruit salad, but he really enjoyed this one (probably because of the cherries!) Have fun and enjoy! Continue reading “Savory Fruit Salad: Mango and Dried Cherry”

Walnut Cranberry Gluten Free Granola Bars

Gluten-free Granola Bar

You may have already seen my other Gluten Free Granola Bars recipe made with chocolate chips. This one we tweaked a bit by adding more walnuts along with the almonds.  ou can use any nuts you like, but using at least one soft nut is helpful for this recipe. For those who cannot tolerate oats, these are perfect. Homemade granola bars are one of our family favorites. I hope you enjoy it, too! Continue reading “Walnut Cranberry Gluten Free Granola Bars”

Raw Banana Ice Cream

There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream.  However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!

Savory Gluten Free French Toast

Image: Savory Gluten Free French Toast

It is very popular now to serve savory dishes that are usually sweet. I have been wanting to create a savory french toast for some time now and finally did. I believe the type of bread you use sets a tone for this dish. You must use a gluten-free bread that is soft in texture and has holes in order for the egg mixture to be absorbed. I used Udi’s Gluten-free White Sandwich Bread. As soon as I started soaking the bread in the egg I could smell a sweetness to it which is not what I originally wanted. I find that most soft textured gluten-free breads are higher in sugar than heavier breads. I look forward to making this with Udi’s Gluten-free Whole Grain Bread and see if it is as sweet. However, I do have to say this was a tasty dish!  Adding the fresh ripened peaches tied it all together. This would make an ideal and easy brunch! Continue reading “Savory Gluten Free French Toast”

Gluten Free Chili Lasagna

Image: Gluten Free Chili Lasagna

My husband asked me to make chili, but of course, I had to find something new and unique to do with the chili besides plopping it in a bowl, though he loves it that way. Some people make Mexican lasagna with tortillas, refried beans and ground beef. Why not make a chili lasagna instead, gluten free, of course!? Hope you like it. If you cannot find gluten-free tortillas you can either make Gluten-free Soft Corn Tortillas or Low-sodium Gluten-free Tortillas. Enjoy! Continue reading “Gluten Free Chili Lasagna”

Gluten Free Chili Recipe Without Tomatoes

This gluten free chili recipe is made without tomatoes. I taste-tested this recipe so much I didn’t even need lunch, it was that good! You don’t need to cover this up with cheese and onions, but by all means, enjoy! It naturally thickened without the use of flour, but you can make it as thin or as thick as you wish. I wanted a thick chili today for use in my chili lasagna recipe. I will post that recipe in the next couple of days. In deciding what ingredients to use in this gluten free chili recipe, I considered some of the ingredients of my daughter’s award winning chili recipe, chocolate and bacon, but decided to go on the healthier side with lots of peppers, onion, green chiles and lean ground beef. It did the trick! I hope you enjoy this gluten free chili recipe as much as we have. Continue reading “Gluten Free Chili Recipe Without Tomatoes”
