I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose. Gluten Free Banana Pancakes
No one ever suspects these pancakes to be gluten-free. These pancakes are so good, you may want to double or triple the recipe to store some in the freezer for fast breakfasts during the week. Continue reading “Gluten Free Banana Pancakes”
Gluten Free Chicken Fried Rice (Vegetarian Options)
This gluten free chicken fried rice recipe is a great for those watching their sodium and fat intake, as well as being gluten-free. If you are not watching your fat you can use any chicken parts versus chicken breast meat. If you are not on a gluten free diet you can use regular soy sauce. If you are not watching your sodium intake you can use any kind of regular gluten free soy sauce or tamari sauce. If you are vegetarian, you can use scrambled eggs versus chicken. Potato Frittata with Pepperoni
Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Frittata recipes make an inexpensive Sunday brunch or dinner along with a vegetable or salad. Continue reading “Potato Frittata with Pepperoni”
Gluten Free Apple Bread Pudding Cake
I had two goals for this dessert. I wanted to make a dessert that was heavier than a cake, yet lighter than a brownie; with less sugar than the average applesauce cake. I used agave syrup, blended stevia powder, and some homemade applesauce. It came out between a good brownie and a bread pudding; moist, but not wet. This recipe is dair-free, but not egg-free. Applesauce Sweetened with Agave (Naturally Gluten Free)
Do you have any apples that you do not want to waste? Make some delicious homemade applesauce with this easy recipe. You can make a great dessert with it, eat it plain, or even top your ice cream. My specific goal for this recipe was to make just enough applesauce for a gluten-free applesauce coffee pudding cake which I will post next. Continue reading “Applesauce Sweetened with Agave (Naturally Gluten Free)”
Gluten Free Carrot Cake (Sugar-Free)
This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)! It is adapted from a Carrot Cake Recipe thay used to be published on All Recipes website. Continue reading “Gluten Free Carrot Cake (Sugar-Free)”
Different Cannoli Filling – with a Twist
I just posted my Chocolate Potato Truffles Recipe and was pleasantly surprised to find the texture of the filling to be very similar to the traditional ricotta cannoli filling, but this filling contains walnuts. If you’re looking for different cannoli filings, this is a great alternative! Often one adds chopped pistachio nuts at the ends of the cannoli, therefore I used chopped walnuts on these. The walnuts in the filling make a good substitute for the chopped chocolate in the traditional cannoli filling, but you can also use chocolate if you wish. I have recently used gluten free chocolate mousse as a filling on Easter and everyone really enjoyed it. I’ve also used Orgran’s Chocolate Mousse and with added powdered sugar and cocoa. My husband loved it and I know the rest of my family went crazy over this one. I sent the photo below to my sister ahead of time to make her drool! It worked! Gluten Free Flourless Brownie Recipe
I decided to play around with a new gluten free flourless brownie recipe. Instead of using almond meal flour I used ground walnuts, which I ground in my food processor. I topped it off with my chocolate ganache that I use on my cheesecake. This recipe is flourless, rich and chocolaty! Enjoy! Continue reading “Gluten Free Flourless Brownie Recipe”
Gluten Free Cannoli Shells
Cannoli is a Sicilian dessert consisting of a crispy tube shell filled with sweet ricotta cheese filling. My aunt would make several variations for special occasions. You can add dried fruit, glazed cherries, pistachio nuts, or chocolate chips to the filling or use as garnish. They make you feel as if you were in Italy. Continue reading “Gluten Free Cannoli Shells”
