While I already have a gluten free egg rolls recipe on this site, this gluten free lumpia recipe is a bit different. The filling and dipping sauce is spiced with garlic, and the sauce has strong accents of garlic and soy sauce. I usually make my egg rolls filled with ground pork, vegetables, and scrambled eggs and my spring rolls with all vegetables. This lumpia is filled with ground beef and vegetables, though you may use pork, shrimp, and more, as well as just vegetables. Either way, they are crispy and delicious as well as the sauce. Gluten Free Financiers (Mini French Tea Cakes)

Financiers (pronounced “fee naun seers” in French) are mini French tea cakes characterized by its almond flour. These gluten free financiers are no different other than it calls for “gluten-free” all-purpose flour. I like to use my all-purpose flour blend as it uses superfine rice flour which does not create a gritty texture, yet it rises high and tastes very close to gluten all-purpose flour. This recipe is made up of primarily flour, almond flour, sugar, and egg whites. I’ve suddenly been on an almond flour kick and egg white kick. They are a healthy choice. I hope you enjoy them. Gluten Free Flourless Almond Cake

This cake is naturally gluten free and is made with almond flour or ground blanched (skinless) almonds. It is extremely versatile as it can be flavored with almond extract, lemon zest, or orange zest. You can even use vanilla extract if that is all you have on hand. The recipe for this gluten free rainbow cake is also dairy-free. Of course, you will need to use a dairy-free frosting or dairy-free whipped cream (which I do not list below). This cake is great for kids’ parties or to brighten up anyone’s day. The cake is a sponge cake which makes the perfect cake to use with whipped cream. Thin Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe

I am aware that many individuals on a gluten free diet are watching their intake of starch. In addition, some individuals have trouble with gums. This gluten free cake recipe is free of all starch (potato, tapioca, arrowroot, and cornstarch) and gums (xanthan, guar, etc). It is also free of leaveners such as baking soda and baking powder. Obviously, the cake still calls for sugar, which is still high in carbohydrates, but you save a ton of carbs and have added protein from the eggs in this gluten free cake recipe. It is light due to the whipped egg whites that are folded in towards the end. I’m not keen on using rice flour in cakes because it is usually gritty, unless it is a superfine rice flour.
