I’ve been receiving more and more request for meals in a mug recipes, as well as individual portion-sized recipes. This gluten free meatloaf in a mug can be made in about five minutes, two of which is for cooking. Surprisingly, the flavor is one of the best-tasting meatloaves I’ve had. Gluten Free Cheese and Spinach Gnocchi

Ricotta Spinach Gluten Free Gnocchi

Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!

I used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. Four-Cheese Gluten Free Quiche with Leeks & Bacon

I had some leeks in the frig that were crying out, “Use me before I go bad.” You can make this gluten free quiche with crust. However, if you are watching your carbs, skip the crust and just oil the pie dish and bake the filling. The cream, bacon and cheese are low in carbs. The filling is incredibly moist and flavorful. Gluten Free Beef Stir Fry with Broccoli (Lower-Fat Option)

During a visit at PF Chang’s, our waitress stated that most of the entrees are over 1,000 calories. It was hard for me to imagine, but after learning how to stir-fry the authentic way, I now understand. If you want amazing flavor in your stir-fry meat, use lots of oil. Gluten Free Indian Fry Bread

Navajo fry bread was made by the Navajo Indians. Once other tribes began creating their own versions of the bread, it was known as Indian fry bread. Not all recipes for Indian fry bread contain yeast, but this version does. Some use cornmeal, while this one does not. I got the idea when a reader recently emailed me about how my gluten free pizza dough recipe (that you can make in a bread machine or not) turned out to be perfect for gluten free Indian fry bread. She doesn’t use a bread machine, but makes the dough by hand. You can do either. I have adjusted the recipe a bit if you just wish to try 1/3 of the pizza dough recipe. I used less egg white, a little more oil, a little more water, and a higher ratio of cornstarch for crispness. To my amazement, it was absolutely fabulous! I didn’t expect this Indian fry bread (actually a flatbread) to be appealing since it is a thicker dough than I am accustomed to using for what I consider American-Mexican food, but it was. Enjoy! Sweet & Savory Gluten Free Meatloaf

Savory enough for adults with enough sweetness to please the kids, this gluten free meatloaf will please all. My husband grew up on a Kid-Friendly Meatloaf Recipe which contains ketchup. I’m trying to get him away from all of the salt that ketchup contains. mainThis is it! It’s sweet without too much salt. I love it! As a kid, I hated my mother’s meatloaf, but fell in love with mother-in-law’s ketchup-oatmeal version. I’ve been allergic to tomatoes for years and had to give it up. Now this is one you can sink my teeth into. The flavor remains even between two thick slices of bread. In addition, it’s so moist.

Sweet & Spicy Gluten Free Soba Noodles & Chicken

Gluten Free Soba Noodles Stir-Fry

Soba means “buckwheat” in Japanese. Many Japanese dishes contain soba/buckwheat noodles. King Soba offers safe, gluten free soba noodles in a variety of flavors. My favorite is their Buckwheat & Sweet Potatoes Noodles. Buckwheat noodles are so much healthier than rice pasta. I use them in stir-fry as well as other pasta recipes. The texture is amazing and holds up well. Just be sure to cook them al dente before frying them in this recipe. I usually use the Sweet Potato Soba Noodles. I just love the sweet flavor, even in savory dishes. They would be ideal for this dish as it is slightly sweet and slightly spicy. Sweetness with spiciness is a marriage made in heaven, in my book.
