This recipe brings back fond memories of our traditional Sunday Italian dinner at my grandmother’s house when I was a child. Though Grandma didn’t make gluten free spaghetti and meatballs, this recipe tastes just the same. All you need is good tasting gluten free bread crumbs (there are some bad ones out there) or gluten free oat flour. You can make this recipe to serve a crowd, or freeze most of it for future use. I usually make it ahead of time and freeze it in several different size contains: individual, two servings, four servings and one large one. Then I am prepared for unexpected guests or when I just don’t have the time to cook for my hubby. Gluten Free Osso Buco in a White Wine Sauce
Osso buco (also known as ossobuco) is my father’s favorite dish. He orders it whenever he sees it on a menu. It is an Italian recipe and when translated mean “hole of bone”. This is due to its succulent bone marrow. Perhaps this does not sound appealing, but you will have to taste it to appreciate it. The rich flavor of the marrow is what creates its rich sauce. Though you will find osso buco recipes that call for red wine, I chose to use white as it is traditional. If you desire an old school version add a bit of cinnamon. Many assume the tomato based sauce is traditional, but it is actually a modern version. Served over polenta or mashed potatoes and topped with gremolada (parsley, lemon juice, and garlic), this gluten free osso buco is a beautiful dish. (See vegan version in the Tips section below). Creamy Saucy Gluten Free Black Bean Chicken Chili
I have to say, this is the best chili I have ever eaten! It reminds me of ham and beans, made with fresh ham. It is very flavorful, and is made without chili powder and without tomatoes. Due to the amount of cumin it is on the mild spicy side. To make it kid-friendly, cut back on the cumin, and add additional salt. Chicken and Vegetable Gluten Free Risotto (with Vegan Option)
If you have some leftover chicken, this gluten free risotto recipe will knock your socks off. Make it sweet or spicy with two choices of sauces. This is also a dish you can easily make in advance for guests. For a quick and easy weeknight meal, use left over chicken and vegetables. All you’ll need to do is cook the risotto. Gluten Free Frittata with Spinach Potato and Cheese
If you’re serving Easter brunch, this gluten free frittata would make an excellent addition to your menu. You may multiple the ingredients and make it in a large dish to feed a crowd. Some become confused with similar recipes such as a quiche or omelette. An omelette is folded, a quiche contains a crust, and a frittata is usually mixed up with the added ingredients. You may add meat, vegetables, cheese, pasta, potatoes and more to any of the above. They are delicious. I find a quiche to be more appealing, aesthetically, though you can create a very aesthetic frittata, as well. I provide the technique below. Enjoy! Gluten Free Chicken Noodle Soup
Though gluten free chicken noodle soup may be made with your favorite ready-made pasta, I chose to use my new homemade gluten free egg noodles (tastes more like pasta) in this recipe. Whether you’re down for the count due to a winter cold, or you just wish to warm up a bit, this soup has a ample flavor, and you’ll love the texture of the noodles. There are a couple of things that prompted this recipe creation. The texture of the noodles reminds me of Campbell’s Chicken Noodle Soup, which caused my cravings. The second thing, was that I need a gluten free chicken soup recipe to link to in my upcoming gluten free matzo ball soup recipe. Soup is great just about any time: winter, spring and fall. Gluten Free Crepes (Sweet or Savory)
Though I already have a Gluten Free Crepes Recipe, it is flourless and high protein. Today, after a Facebook fan requested a gluten free crepe recipe, I began to crave them myself. I wanted a traditional flour crepe; therefore, I used my gluten free all-purpose flour blend recipe. Though I suggest using a blender to make crepes, they can be made by whisking by hand. The use of a blender provides a smooth batter, so they will turn out perfectly.
In case you have never made crepes, I provide the instructions on how to swirl them in the pan, for a perfect crepe. Just note that sometimes your first crepe doesn’t turn out perfectly, just as in making pancakes. It allows you to adjust the temperature of the pan. Perhaps the first one will provide you a little snack to keep you satisfied until the others are done. Enjoy!
Gluten Free Chicken Pot Pie
This delicious gluten free chicken pot pie recipe was adapted from All Recipes’ Chicken Pot Pie IX recipe, with a couple of twists of my own, creating a very flavorful sauce, with a touch of sweetness, which you may control. I’ve never enjoyed a pot pie before, even when they were made with gluten, but I went back for seconds on this gluten free pot pie! My newly developed gluten free pie crust is moist, light, and flaky, and the sauce in this recipe is so flavorful, making this is a match made in heaven! My husband had to stop eating premade pot pies years ago due to his low-sodium diet. So, he was in heaven with this version, as I was able to control the sodium content.
