Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. Flaky Gluten Free Croissants

I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. I’ve had a number of Facebook fans ask me for a gluten free pineapple upside down cake recipe over the years and I always plan to get right on it, but somehow do not. It’s my husband’s favorite, too! So, finally, yesterday when someone asked me for a recipe again, I developed a recipe immediately and baked it today. It turned out light and high with a perfect, moist texture. I was very pleased. Cheesecake is one of my favorite desserts. However, I’ve been getting a bit more creative as you can just make so many of the same old gluten free cheesecake recipes before you get bored with them. I’m always looking for something different and ran across a Caramel Cheesecake Recipe on the BBC’s website. Though all of the ingredients were listed by weight since the BBC is in Europe, I weighed all of the ingredients and converted into cups for you and made a little change. Butternut Squash Gluten Free Ravioli with Creamy Garlic Sauce

I absolutely adore Pasta Prima’s Gluten Free Butternut Squash Ravioli, however, now that I realize I am allergic to tapioca I cannot have them. So, to the drawing board I went and the results were nothing but spectacular! Making homemade gluten free ravioli is definitely a weekend project for those who work, but you can also make the filling a couple of days in advance. My husband enjoyed his with my Italian Spaghetti Sauce and I used the creamy garlic sauce (recipe provided below). I hope you enjoy these gluten free ravioli, as well. They are definitely a treat! Lower-Fat Gluten Free Coleslaw

Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt. Gluten Free Blueberry Pie

Today is National Blueberry Pie Day! What better way to celebrate it than with a gluten free blueberry pie? You will find the link below to my gluten free double pie crust, which is pretty easy to handle compared to most gluten free pie dough. This makes transferring the crusts a breeze, especially in a double pie crust. If you’re pretty new to pie baking, consider  cutting out shapes and placing it on top, like in this Gluten Free Cherry Pie. I think I’d use smaller stars next time, though. Meanwhile, I hope you get to enjoy some of this delicious blueberry pie, as it is made with fresh blueberries. If you don’t have the time for fresh, use Comstock or Wilderness brand pie fillings.
