A friend of a friend shared this recipe with me, but I had to alter it to make it gluten-free. It can also be made dairy-free, if necessary. I added an alternative sauce, too! You really can use any sauce you like: spaghetti, Alfredo, pizza, brown gravy, etc. You also can add sauteed onion for additional flavor, especially if not using any sauce at all. Chewy Gluten Free Oatmeal Cookies
I am making a Christmas package full of homemade baked goods for a family member and will be shipping it soon. I decided to make gluten free oatmeal cookies for him, even though he is not on a gluten-free diet. I am sure he will not be able to taste the difference in this recipe. Ginger and Green Chile Rice
I was starving and opened the refrigerator to find nothing I wanted to eat. I saw about 3 bites of left over rice and some green chiles. Gluten Free Raspberry Chipotle Sauce
Recently, I purchased a bottle of Fischer & Wiser Roasted Raspberry Chipotle Sauce that I could not wait to use. Unfortunately, it was made in a facility that manufactures wheat products. I just had to create a recipe for everyone to use that is completely gluten free! Luckily, I had some frozen raspberries in the freezer! I used this gluten free raspberry chipotle sauce as a marinade for steak last night, only marinading for 30 minutes. Then I left the rest of the steak marinade for 24 hours and they were both great, but the 24 hour marinade had penetrated the meat a little bit more, creating a bit more flavor. Gluten Free Beef Tostadas
This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Enjoy. Gluten Free Navy Beans
A gluten free navy beans recipe just like my mother used to make. The only difference is that she used to add a little tomato sauce for color and flavor. I used a little tomato-free gluten-free chipotle sauce. This is a great recipe to make and freeze individual portions for those busy days and nights, or just when you’re too tired to cook. Gluten Free Chicken Biryani (Indian Chicken with Buttery Rice)
This version of chicken biryani (Indian chicken recipe), is made with ingredients that you can find at your local grocery store and is a naturally gluten free recipe. I used to work near a restaurant that had the best Indian food ever. I miss their butter chicken, but cannot find a recipe which can even come close. I must say that this recipe is not butter chicken, however, it is buttery and I like it almost as much. It takes quite a bit of time to make, but the rice can be made in advance which is very convenient, especially if you are having guests. Enjoy this treat. I sure did! Gluten Free Porcupine Meatballs Without Tomatoes
My mother-in-law used to make porcupine meatballs in a red sauce. All her kids miss it so much, especially my husband. Because of my tomato allergies I decided to see if a similar recipe would work with a brown gravy. This is naturally gluten free, but you need to be careful to use gluten-free ingredients in the sauce, which I explain below. Mom used to use instant white rice, many people use uncooked long grain white rice. I used cooked brown rice, as I had some left over already in the frig. Brown gravy just does not have any flavor unless you make it from some sort of meat base or fat. I didn’t have any meat fat on hand and decided to spice up the roux (flour and butter mixture) with a little sauteed onion. It worked pretty good! Yeast-Free Gluten Free Focaccia Bread
This gluten free focaccia bread is commercial yeast-free. If you are allergic to yeast you may try substituting the apple cider vinegar with a bit of 1/4 teaspoon of cream of tartar. I haven’t tried it myself, but any high acidic ingredient will do, lemon juice, etc. This is a hearty recipe, much like regular focaccia.
