I have been making an effort to reduce the carbohydrates in my diet. I purchased a Spiral Vegetable Slicer and my first experiment was making zucchini ribbons. Using zucchini pasta instead of high carb rice or corn pasta saves a tremendous amount of carbohydrates. One medium zucchini contains only 6g carbs and 2g fiber. My favorite gluten free brown rice pasta contains 43g carbs and 2g fiber per 1/2 cup of uncooked pasta. If you enjoy zucchini, you will love this dish. The different between deep-dish and Chicago-style pizza is that Chicago style is made with the cheese and meat directly on the crust. Then they are topped with sauce. Have you heard the news? Bob’s Red Mill just released a new product, a gluten-free baking flour that can be used cup-for-cup in your gluten free desserts, without bean flour. They suggest using traditional recipes and substitute the wheat flour/all-purpose white flour with their new Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. I created a copycat gluten free flour, similar to 1-to-1, which also works well in cookie, cake, brownie, muffin, and pancake recipes, to name a few.

You know the saying, “death by chocolate”? There are a few brands of ice cream named “death by chocolate” as well. Currently, I am avoiding chocolate and had a craving for some. It had been over two months since I had any. So, I finally got around to ordering some carob powder and created a new carob ice cream recipe. I started with my Rich Chocolate Ice Cream Recipe (which should be named, “death by chocolate”). Then I made it a little richer to make up for the lack of chocolate. I love it and so does my chocolate loving husband! If chocolate keeps you awake at night, note that you can eat this any time because carob does not contain caffeine.
