While I already have a gluten free guacamole recipe on this site, it is tomato-free due to my tomato allergies. However, I thought it was time to share my old favorite guacamole recipe, prior to my food allergies. Be sure to serve them with gluten free tortilla chips. Some brands include Garden of Eatin Organic, Glutino Tortilla Dippers, and Way Better Snacks.
Gluten Free Guacamole
A traditional guacamole recipe with plenty of flavor. Make it spicy or mild.
Ingredients:
- 2 ripe avocados, halved and seeded
- 1/2 lime, juiced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon cayenne
- 1/4 teaspoon garlic powder
- 1/4 yellow onion, diced
- 4 oz. gluten free salsa (La Victoria Thick n' Chunky: mild, medium or hot), drained
- 1/4 jalapeno or habanero pepper, seeded and minced (optional)
- 1 tablespoon chopped cilantro (optional)
Instructions:
- Using a tablespoon, scoop out the meat of the avocados and place them in a bowl.
- Squeeze the half of lime over the avocado and mash them. Leave them a little chunky.
- Sprinkle the salt, cayenne, and garlic powder over the avocado.
- Add the onions, salsa (mostly chunky portion), and pepper and cilantro, if using; and stir.
- Chill or serve at room temperature.
