Gluten Free Beef Tenderloin
This Christmas we only had a small amount of guest, therefore, serving a fine cut of meat was inexpensive. If you have a special dinner coming up soon, consider a beef tenderloin, which is the same cut as filet mignon. It is easy to cut, carve, and serve. Because it is so tender and juicy, no gravy is required, however, if you’re serving it with mashed potatoes you can make gravy, if desired. I rarely measure ingredients for gravy, but have provided you with the ingredients and instructions below. There is nothing specific you need, besides oil and seasonings. You’ve heard of breadsticks that you dip into pizza sauce, right? Well, picture breadsticks shaped into balls with a little, or a lot of cheese and sausage inside, and it’s yeast-free. Heaven, right? And you can make them a little more guilt-free by using turkey sausage, as I did. They were so good, I skipped the sauce entirely. However, my father and husband thought they were too dry to eat alone. Let’s face it, it’s bread. It had a nice crunch on the outside crust which I loved! My intention was to develop a recipe for gluten free jelly donuts prior to Hanukkah, but unfortunately, work and caring for my elderly father caused a delayed. Gluten Free Cheese Sticks or Appetizer
This recipe is very versatile. You may use your favorite cheese and your favorite sauce, jam or jelly to serve it with.. Serving them plain is also an option. Gluten free cheese sticks are no different than any other recipe other than the bread crumbs you use. I have supplied a link to my season bread crumbs recipe, however, they may be made plain, as well. The presentation you create all depends upon the use. If serving on a table with other appetizers you may desire to add a bowl of warm or room temperature jelly, jam, or homemade berry sauce. During the holidays a cranberry sauce is perfect. A red sauce is ideal, as it is a perfect compliment to fried cheese, rather than blueberry, blackberry, etc. In addition, you may cut the cheese in any shape you desire. Gluten Free Corn Dogs
I came across Martha Stewart’s recipe for Texas Corn Dogs. Knowing it had a much higher ratio of cornmeal than I desired to use, I created a similar recipe and made gluten free corn dogs with a 50% ratio of rice flour and cornmeal along with buttermilk.
