Easy Gluten-Free Dairy-Free Mashed Potatoes (or Traditional)

Allergen Free Dairy Free Gluten Free Mashed Potatoes

This gluten-free dairy-free mashed potatoes recipe is not only easy to make but is delicious; and is made completely allergen-free. They are made without dairy, casein, soy, nuts, or any of the eight major allergens. Instead of peeling the potatoes and cubing them, you boil them whole and the peel just slides off. The main thing is you don’t have to sacrifice on taste. If you are not allergic or intolerant to any of these ingredients, feel free to use butter and cow’s milk. Gluten Free Hot Chili Oil Recipe

Homemade Gluten Free Chili Oil

I use hot chili oil in many of my Asian dishes such as the dipping sauce for my Gluten Free Potstickers Recipe and sometimes in Fried Rice.  Often readers inform me that they cannot find chili oil in their local stores. I decided to solve that problem by supplying you with a homemade hot chili oil recipe. I hope you enjoy it and find it useful. You can fry chicken in it, add a bit to ice cream and other unsuspecting food. Continue reading “Gluten Free Hot Chili Oil Recipe”

Mild Gluten Free Sweet Chili Sauce Recipe

Homemade Gluten Free Sweet Chili Sauce

Sweet chili sauce is a Thai favorite. You can purchase this sauce in bottles. One brand that is gluten free is Thai Kitchen Sweet Chili Sauce. If you’re allergic to tapioca, choose another gluten free brand or make this recipe. It’s easy to make it at home, though; and can be stored for a very long time. (Though it begins to loose its heat after a month or so.) While ginger is not a common ingredient in sweet chili sauce, I provide it as an option in my recipe. Lately, I use fresh ginger in almost all of my Asian dishes. Use this sauce in dips, dipping sauces, and my favorite, Asian Chicken Lettuce Wraps/Cups. I think I’ll start using this as my go-to dip for my Gluten Free Potsticker Recipe. Since it contains no oil, it is low in fat and calories (not carbs). For added calories, use a little salad oil or my new Gluten Free Chili Oil Recipe. Grain-Free Gluten-Free Black Bean Brownies (Allergen-Free)

Gluten Free Black Bean Brownies

Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They’re so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as pseudograin.

Enjoy this healthier style gluten free recipe as part of my January 2015 Healthy Gluten Free Diet Event. Continue reading “Grain-Free Gluten-Free Black Bean Brownies (Allergen-Free)”

Easy Gluten Free Chocolate Mousse in 5 Minutes

Easy Gluten Free Chocolate Mousse

We had a couple of guests for an early dinner on New Year’s Day. I ran out of time and hadn’t made any dessert. So, right after dinner I began experimenting with a quick chocolate mousse recipe and whipped up one that I will make again and again. I was so pleased and so were our guests. They were gluten-eating guests, but one loved it so much, she cleaned the mixing bowl. Enjoy! Continue reading “Easy Gluten Free Chocolate Mousse in 5 Minutes”

Gluten Free Indian Fry Bread (Navajo Flatbread)

Gluten Free Indian Fry Bread

Navajo fry bread was made by the Navajo Indians. Once other tribes began creating their own versions of the bread, it was known as Indian fry bread. Not all recipes for Indian fry bread contain yeast, but this version does. Some use cornmeal, while this one does not. I got the idea when a reader recently emailed me about how my gluten free pizza dough recipe (that you can make in a bread machine or not) turned out to be perfect for gluten free Indian fry bread. She doesn’t use a bread machine, but makes the dough by hand. You can do either. I have adjusted the recipe a bit if you just wish to try 1/3 of the pizza dough recipe. I used less egg white, a little more oil, a little more water, and a higher ratio of cornstarch for crispness. To my amazement, it was absolutely fabulous! I didn’t expect this Indian fry bread (actually a flatbread) to be appealing since it is a thicker dough than I am accustomed to using for what I consider American-Mexican food, but it was. Enjoy! Make Ahead Baked Gluten Free French Toast

Gluten Free Raisin French Toast

My father is visiting with us and is 100 years old. While he enjoys my newest Gluten Free Cinnamon Raisin Bread Recipe, he finally admitted that he doesn’t appreciate the harder crust which is a result of long baking in my bread machine. He’s always enjoyed soft food, but as he ages, soft food is a requirement. He’s never even care for his bread toasted, just warmed, not brown or golden. So, I thought I would soften the ends by making him French toast this morning instead of dry toast and his awful cream of wheat (he’s not gluten free). The acidic fruit has been getting to him anyway.

To speed up the process I soaked the bread overnight. This way it was all set to fry up in the morning. Caring for an elderly parent is a lot of work and mornings are pretty busy. A hearty breakfast is crucial as this is when they have their largest appetite. Continue reading “Make Ahead Baked Gluten Free French Toast”
