I try to stay away from corn as much as possible, but I was craving some gluten free meatballs. Delish, by the way! Because I cannot have tomato sauce, I needed to make something that was moist with the meatballs. So, I treated myself to some polenta! I usually make the polenta creamy and other times grilled. This is great alone or topped with marina sauce, spaghetti saucecreamy basil sauce, or a wine sauce. Meanwhile, I hope you enjoy these gluten free meatballs and creamy polenta. Mangia! Gluten Free Basil Cream Sauce

This basil cream sauce recipe is lower in fat than those made with whipping cream or evaporated milk. Yet it was so yummy on my ravioli. Basil cream sauce is naturally gluten free, however, if using a commercially grated cheese, you’ll need to ensure that is is gluten free. Make it dairy free by using milk and cheese substitutes. First off, this gluten free apple coffee cake is heavenly, with or without the glaze! I recently created a gluten free coffee cake where you can add a jam, pie filling or cinnamon swirl. However, when I made the gluten free apple coffee cake this morning, I noticed it needed a bit more time to bake, as the pie filling is more moist than a thin layer of jam. Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, “Why not a gluten free pancake recipe?” There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline’s Gluten Free Pancakes recipes. I had put off developing a soft gluten free dinner rolls recipe, for too long. So, I made it a priority, and I am so glad that I did! I am not a big bread eater, but I just cannot stop myself with these rolls! They are not grainy at all. Gluten Free Fruit Cake – Fruitcake

I have had a few requests for a gluten free fruit cake recipe. I created a lighter fruit cake and lessened the typical amount of sugar, glazed fruit and baking temperature, because I am not a fan of fruit cake, at all, even gluten free fruit cake. The adjustments were perfect, as is this gluten free fruit cake recipe, now, at least for me. Gluten Free Cornbread Stuffing Recipe with Sausage Option

The only gluten free stuffing (some say dressing) that I care for is the kind that has been baked in a bird, whether a turkey or a chicken. However, this gluten free cornbread stuffing recipe is very good, after two attempts, and I didn’t even have it stuffed in a bird when testing it. Of course, a bird’s juices surely provides more flavor. This gluten free cornbread stuffing recipe has plenty of flavor on its own, and is perfect for those who do not care for sage, though it may be added. Gluten Free Sandwich Bread Recipe II

I love experimenting with my basic gluten free sandwich bread recipe, changing flours, mostly. This time I used regular grain white rice flour and sorghum flour, along with the usual starches and other ingredients. One tip is to use more tapioca flour/starch if you want a lighter bread, which you can try on this recipe. I’ll give this a try next time by switching the amounts of tapioca and potato starch. Enjoy this gluten free sandwich bread for sandwiches, french toast or toast.
