Gluten Free Sweet Potato Muffins

These gluten free sweet potato muffins have the weight and texture of a quick bread, such as banana bread, but perhaps a little lighter. They are very moist, and more importantly, packed with nutritious ingredients which I wouldn’t mind giving my grandchildren. And being that I used xylitol instead of sugar, I look forward to using them as a healthy snack for myself more often. These gluten free sweet potato muffins would make an excellent substitution for cornbread this Thanksgiving, as well. And they are a great way to use left over sweet potatoes! Gluten Free Chocolate Peanut Butter Cookies

My first thought when seeing these gluten free chocolate peanut butter cookies was, “Got milk?” And then when I tasted them, my first thought was “OMG! – to die for!” My second thought was “Got milk?” They are chewy, right out of the oven and crisp up a bit upon cooling. And since this gluten free cookie recipe does not call for milk, it is completely dairy-free, if using dairy-free chocolate chips. For those with peanut allergies, substitute the peanut butter for almond butter, or the nut butter of your choosing. For nut and peanut allergies, substitute it with Sunbutter. Gluten Free Fluffy White Frosting

Because so many of the cake recipes that call for frosting on this site call for cream cheese, I thought a nice fluffy white icing recipe was in order for those who are not only gluten free, but dairy free. This fluffy white frosting recipe is great because of the color. It is actually white (even with the use of regular vanilla), instead of off-white from so much butter/margarine. If you wish the same white color, but wish to use additional vanilla for flavor, it is suggested to use clear vanilla. There are a few brands that advertise they are gluten free. Corn Free Gluten Free Sweet Potato Spoon Bread

Even gluten free sweet potato spoon bread usually contains cornmeal, but for my corn free readers I thought I would make a corn free version. You can definitely substitute half of the flour for some cornmeal which will need to be cooked in the milk prior to adding it to the food processor or blender. However, my husband really enjoyed the corn-free version, and he’s a cornbread lover, and I hope you enjoy it, as well.

Gluten Free Cornbread for Stuffing or Dessert

Moist Gluten Free Cornbread

Last year I had a request for a good gluten free cornbread stuffing recipe, but I hadn’t created a gluten free cornbread recipe, and never got around to it. So, this year, it is my top priority. Once you have a good gluten free cornbread recipe you can make any stuffing recipe you choose using that gluten free cornbread. Preferably it should be a soft, absorbable one. This recipe is more of a cake-style cornbread recipe, however, you can adjust it to create a more traditional gluten free cornbread for stuffing.

I love the dessert version. I think my hubby’s favorite foods are stuffing and cornbread, and he was in heaven with this gluten free corn bread recipe this morning, and he’s not 100% gluten free! Gluten Free, Dairy Free, Sugar Free Eggnog Recipe

I had never tasted a sugar free eggnog recipe before today, but the holidays are almost upon us and who cannot resist all of that sugar, dairy, chocolate, what have you? I certainly have trouble doing so! I do not have eggnog very often, but when I do, I just cannot seem to stop myself from having a second glass. Heaven knows if we have a holiday dinner and there is left over eggnog, I’m having it for breakfast instead of my healthy protein shake. This year, I just had to get a hold of myself prior to the holidays. This is what inspired me to come up with this sugar free eggnog recipe.

You can double, triple, etc. as needed.
