I love these gluten free potstickers! People on a gluten-free diet or not, rave about this appetizer. They especially like the idea of fresh dough. They can never tell it’s gluten-free. People enjoy everything, the filling, the dough, and the dipping sauce. Enjoy!
Gluten Free Banana Pancakes
No one ever suspects these pancakes to be gluten-free. These pancakes are so good, you may want to double or triple the recipe to store some in the freezer for fast breakfasts during the week. Continue reading “Gluten Free Banana Pancakes”

Gluten Free Blackberry Sauce for Ice Cream and More
My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests. Potato Frittata with Pepperoni
Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Frittata recipes make an inexpensive Sunday brunch or dinner along with a vegetable or salad. Continue reading “Potato Frittata with Pepperoni”
Gluten Free Apple Bread Pudding Cake
I had two goals for this dessert. I wanted to make a dessert that was heavier than a cake, yet lighter than a brownie; with less sugar than the average applesauce cake. I used agave syrup, blended stevia powder, and some homemade applesauce. It came out between a good brownie and a bread pudding; moist, but not wet. This recipe is dair-free, but not egg-free. Gluten Free Shredded Chicken Over Rice
If you’ve ever had a multi-cultural recipe, and enjoy them, you’re in for a treat. It is also low in fat. Enjoy! Continue reading “Gluten Free Shredded Chicken Over Rice”
Gluten Free Strawberry Chicken Salad
I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in my apple chicken salad recipe, it sweetens up just right. You can use this chicken salad atop a salad, in a sandwich, or on celery sticks or crackers for an appetizer. This recipe is gluten-free, sugar-free and low-cal if you use non-fat Greek yogurt instead of mayonnaise. A mixture of both is great, too! Continue reading “Gluten Free Strawberry Chicken Salad”
Gluten Free Carrot Cake (Sugar-Free)
This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)! It is adapted from a Carrot Cake Recipe thay used to be published on All Recipes website. Continue reading “Gluten Free Carrot Cake (Sugar-Free)”
