Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light. You do not have to own a pizza stone to make gluten free pizza crust, though a preheated stone does absorb moisture, creating a more crisp crust, without the use of additional oils and calories. I like to make pizza crust ahead of time, bake them for about 5 minutes and then freeze them. This enables me to come home after a busy day and just top them and bake them – voila! – a great gluten-free pizza ready in no time! Chewy, crunchy and a nice high dough on the edge! Gluten Free Beef Stew Chili

Gluten Free Chili Beef Stew

This gluten free beef stew recipe is actually another one of my gluten free chili recipes without tomatoes, (due to my allergies). Some assume chili is naturally gluten-free, but if you use a package chili mix it may very well contain wheat gluten. This chili recipe is thickened with potato starch, though you may use cornstarch, if that is all you have on hand. You may also add tomatoes to this recipe, if you wish, which will sweeten it up a bit, or you can sweeten it with sugar, agave nectar, stevia or a combination of any of these. It is wonderful over baked french fries, which is how I used it, or you can top it over baked potatoes or rice. It is only a tad spicy, so if you like it hot, spice it up a bit more using additional cumin and chili powder. The worcestershire sauce gives it more a beef stew flavor, therefore, if you desire more a chili flavor, just skip it or add more chili powder. Enjoy! Continue reading “Gluten Free Beef Stew Chili”

Low-Sodium Gluten Free Bread Made with Expandex

Looking for a lighter gluten free bread recipe? The first time I made my gluten-free oat bread recipe I used non-fat milk. This time I used water, less salt, and replaced 1/4 cup of the oat flour with 1/4 cup of Expandex. It has the texture of real white bread, but just slightly heavier because it is moister; has a little heavier crust, and is made with oat flour which is a heavy flour. It makes a wonderful gluten-free sandwich bread! When warm or just cooled it has the texture of white bread. Once it cools completely it has the texture of sliced sourdough bread. Gluten Free Oat Bread

I created this gluten free oat bread recipe to test out Cream Hill Estates’ Lara’s Gluten Free Oat Flour, but oat bread is already one of my favorites.  Oats are known to lower cholesterol, as well.  In a gluten-free diet we need fiber wherever we can get it, therefore, this is a good choice in a gluten free bread.  It is of medium weight, not as light as I wished for, but I will work on perfecting this recipe.  It is moist, though, which is what I was hoping for.  Enjoy!

Gluten Free Pigs in a Blanket

This recipe is not technically gluten free pigs in a blanket, but gluten-free sausages in a blanket. It uses my gluten-free biscuit recipe. I learned while making them that the blankets need to be larger than 4″ in order to prevent from popping open, perhaps enough to overlap at least an inch. I would also suggest trying some egg wash (beaten egg) between the overlapped layers to keep them closed. You just have to make sure that the sausages are not hot while wrapping them. Chewy Gluten Free Oatmeal Cookies

I am making a Christmas package full of homemade baked goods for a family member and will be shipping it soon. I decided to make gluten free oatmeal cookies for him, even though he is not on a gluten-free diet. I am sure he will not be able to taste the difference in this recipe. He does not like overly sweet baked goods, as do I. Therefore, if you have a real sweet tooth, you may wish to increase the sugar. That will make them a little chewier, too. Gluten Free Sweet Potato Puffs

These gluten free sweet potato puffs turned out wonderful! They look like miniature cream puffs. They are more moist inside, though, and without the filling. These lovely little puffs can be served as biscuits or a dessert. If using as a biscuit serve plain or with butter. You can also coat them with powdered sugar to serve as a dessert. I have tried them both plain and with powdered sugar (actually agave powder) and love them both! My hubby wants to try them with butter, but hasn’t yet. He keeps eating them plain. They are not real sweet (but sweet enough) which lends to its versatility. In my last batch I added chopped walnuts. Yum! They tasted close to a zucchini or banana bread. Have fun with these. They are sure to make Thanksgiving special. I can picture them served at brunch, as well. They are also a great way to use up those left over sweet potatoes!
