I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. Gluten Free Chicken Mole (Mild)

Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! Lower-Fat Gluten Free Coleslaw

Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt. Mocha Frosting – or Coffee (Naturally Gluten Free)

In earlier years I was never a fan of buttercream frosting. However with age we our taste buds change. Actually, I believe we lose some. Since I have experimented with different flavors of frosting, I have come to appreciate them. This mocha frosting is one of my new favorites, especially on a rich chocolate cake. You can easily adjust the recipe to make coffee frosting with the tips provided. The key to a good buttercream frosting is how long you beat it. You want it to be airy and light, similar to mousse. Gluten Free Spaghetti and Meatballs

This recipe brings back fond memories of our traditional Sunday Italian dinner at my grandmother’s house when I was a child. Though Grandma didn’t make gluten free spaghetti and meatballs, this recipe tastes just the same. All you need is good tasting gluten free bread crumbs (there are some bad ones out there) or gluten free oat flour. You can make this recipe to serve a crowd, or freeze most of it for future use. I usually make it ahead of time and freeze it in several different size contains: individual, two servings, four servings and one large one. Then I am prepared for unexpected guests or when I just don’t have the time to cook for my hubby. Gluten Free White Cake Recipe [Now redirects to Wedding Cake Recipe]

I thoroughly enjoyed creating this gluten free white cake recipe as it is so easy to handle when inverting. It is due its many egg whites, which also makes it moist, along with its butter and sugar. You can use your favorite fillings and frosting from fruit purees to sweetened whipped cream and chocolate ganache to fluffy white frosting, or chunks of fruit within the whipped cream.
