Grain-Free Gluten Free Bread with Almond Flour (Gum-Free)

One of my Facebook followers requested a gluten free paleo bread recipe with almond flour. Neither my husband or I are on a paleo diet, but it sounded wonderful. While many paleo dieters avoid yeast, other do consume it. This recipe is yeast-based. I will make another one in the near future using baking powder and/or baking soda for those who do not consume yeast. Meanwhile, this bread has a soft crust due to the psyllium husk powder, the texture enables you to fold the bread, and is truly delicious. Enjoy! Gluten Free Raw Pumpkin Cheesecake Recipe

Douglas McNish makes a mean Raw Vegan Gluten Free Cheesecake. I started with his recipe and by the time I was finished, it developed into this lovely raw pumpkin cheesecake recipe. You will need a high speed blender to make this. There is no getting around it. If you are not fortunate enough to own one, note that there are lower cost alternatives to the VitaMix brand. Meanwhile, raw pumpkin cheesecake is topped with raw caramel sauce, whipped nut cream, and cocoa nibs. I’ve included all of the recipes including how to make raw vanilla extract “liquid”. Enjoy! Vegan Pumpkin Ice Cream

This is more of a sherbet than a vegan pumpkin ice cream, but is still extremely delicious for a diary free version. Since its development, I have discovered that adding one teaspoon of xanthan gum added to ice cream creates a more chewy texture. In this recipe you would need to mix about 1/2 teaspoon of gum with the oil. Note, that this is not a new recipe, but the original, published in 2010, seems to have vanished from this site. Enjoy! Classic Gluten Free Waffle Recipe

Image: Gluten Free Waffles

You may be wondering the difference between a waffle and a pancake batter. A gluten free waffle recipe often calls for whole eggs. In this recipe, I have made them the traditional way, separating the egg yolks and whites. The whites are whipped until stiff and then folded into the batter at the end. This lends an airier texture to waffles versus an almost cake-like pancake texture. The other difference between waffles and pancakes is the fat content. Waffles contain more fat (oil or butter) which makes them crisper. Continue reading “Classic Gluten Free Waffle Recipe”

One-Step Gluten Free Graham Cracker Pie Crust

Image: Cheesecake with Gluten Free Graham Cracker Pie Crust

This gluten free graham cracker pie crust recipe is made in one simple step. There is no need to make homemade gluten free graham crackers and then crumble them up. Nor is there need to purchase gluten free graham cracker crumbs, though you may. I created this recipe prior to any gluten free crumbs commercially available. I have used this basic recipe as is and in various other ways. This crust is perfect for a gluten free cheesecake recipes. You can add finely chopped nuts or flax seed, depending upon your dietary needs and desires. It works well for pies and non-baked gluten-free desserts. Enjoy! Gluten Free Pear Crumble

Image: Gluten Free Pear Cobbler

You can make this gluten free pear crumble recipe much easier by using canned pears. However, fresh pears are full of vitamins and minerals. No matter what flour blend you use, it should out about the same because the recipe calls for very little flour. Note, though, tapioca browns easier, but is chewy, and cornstarch has high crisping qualities, and potato starch with just a little less. I have also provided some holiday garnish suggestions. This recipe can be made allergen-free if you skip the nuts. Continue reading “Gluten Free Pear Crumble”

Gluten Free Oat Bread (without Tapioca)

Image: Gluten Free Oat Bread without Tapioca

I have several different gluten free oat bread recipes, one for bread machines, one that is dairy free, and another that contains milk. However, because I am allergic to tapioca flour/starch, I created this oat bread recipe just for me, and others who are allergic to tapioca. Oat bread is my favorite gluten-free bread. It is flavorful, has a great texture, and is healthy for us. I hope you enjoy this recipe. Because it contains a little fava bean flour (which is not bitter), it rises high and makes it lighter. Enjoy! Continue reading “Gluten Free Oat Bread (without Tapioca)”

Gluten Free Chicken Korma (with Dairy-Free Option)

Image: Gluten Free Chicken Korma

I have been wanting to develop a gluten free chicken korma recipe for quite some time, now. It is my favorite Indian dish next to butter chicken. Chicken korma is a spicy Indian dish using turmeric or curry plus other spices. Along with cream, it creates a rich, flavorful dish. You can adjust the heat in this gluten free chicken korma by reducing the cayenne pepper, ginger, and coriander, if necessary. It is of medium heat for an Indian dish, though if not accustomed to Indian food, you may think it is hot. Indian food contains many anti-inflammatory spices, making it a smart choice for an entree. Gluten Free Pizzelle Recipe

Gluten Free Pizzelles - Flat or Molded

A gluten free pizzelle recipe sure to make your Italian grandma proud. They’re crisp, but not too crisp to mold into your favorite shapes. Serve these little gems flat topped with custard, whipped cream, or make ice cream tacos. Another option is to mold them around a cone-shaped mild to fill with ice cream or whipped cream. You can also shape them into cups and fill with your favorite custard, mousse, or ice cream. They also make a great substitute for gluten free cannoli shells.
