I’ve been asked how to prevent gluten free macaroni salad from hardening so much in the refrigerator. I find it best to make the salad right before you’re going to serve it. And if your dressing is well chilled, it should make the salad cold enough. Though, serving it room temperature is fine. I made this salad a little sweet by using stevia, but you can add sugar instead, if desired. It was just perfect! I had never made a gluten free version, and I thoroughly enjoyed it. I was in the mood for a new salad dressing, and something that would compliment chicken. Though my chicken was not marinaded, I really was in the mood for honey mustard chicken. So, the next best thing was to create a honey mustard dressing. This dressing can be used as a sauce for many other dishes, besides salad. Last night for dinner I just wasn’t up to cooking anything, and wasn’t that hungry, but I managed to make some candied walnuts (I used agave), and threw together this blackberry avocado salad together that I absolutely loved! Fresh Fruit Heals Leaky Gut

The best recipes for a leaky gut contain whole foods (unprocessed foods), but some in particular. Perhaps you’re sick of fruit and are now going for those high carb snacks. I think we all have gone through the feeling of being deprived when we first start a gluten free diet, though once you find your favorite brands of gluten free baked goods, including bread, all hell breaks loose on the scale, at least those of us who have healed already. This is why I have been concentrating on finding a more healthy gluten free snack. Though I don’t ever think I’ll give up perfecting gluten free baked recipes. Everything in moderation, right? So, while your gut is still healing, ditch those high carb baked goods and reach recipes for leaky gut such as those containing high complex carbohydrates: legumes (if tolerated), fresh vegetables and fresh fruit. On the 4th of July I had a sweet tooth. Actually, I have had a sweet tooth all week, but not for dessert. I went to the grocery store, hungry, the other day and ended up with a cart full of naturally gluten-free foods, such as gluten-free cocktail onions and raspberry balsamic vinegar. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! I didn’t feel like cooking the other night and my husband suggested a large gluten-free salad.  I started with lettuce and started adding ingredients one at a time, and ended up with this wonderful Mexican salad, which I thoroughly enjoyed!  You can top it off with broken gluten-free tortilla chips.  I had some blue corn tortilla chips on hand.  It made a bit colorful, as well.  I like saving the broken chips at the bag for salad or casserole use.  Make your own and add your favorite ingredients! This fresh beets and pear salad was a delightful change. Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. I am about to make a meatloaf muffin recipe that calls for Stove Top stuffing mix. Since Stove Top does not make gluten-free stuffing I am making my own homemade seasoned gluten free croutons recipe. You can use these croutons in gluten-free stuffing, as well, with or without the seasonings. I hope you find this recipe useful. My husband who gladly uses gluten croutons, likes these better! Gluten Free Chicken Salad Recipe

I usually prefer chicken breasts, in gluten free chicken salad sandwiches, but I had a little left over dark meat chicken on hand, and because it was dark meat every time I looked at it, it reminded me of turkey. I then began to crave one of my old favorites, turkey, cream cheese and cranberry sauce sandwiches, which I have not had in years. But I usually like to eat a bit lighter than that for lunch, especially with all the appetizers I tested recently. Greek yogurt makes a great low-fat substitute for cream cheese, as well as mayonnaise, in sandwiches. Since I had dried cranberries on hand makes this recipe came close to my old favorite, but I added in a little feta cheese, which wasn’t really noticeable, but added flavor. A little added celery, walnuts and a touch of agave syrup did the trick! Get creative and make your own adjustments to this easy recipe. Perhaps some onion. What will you use?
