Savory Fruit Salad: Mango and Dried Cherry

Gluten-free Mango Fruit Salad

Of course this fruit salad is gluten free, but it does not take special ingredients to make this recipe. It is fast to make, yet elegant to serve, with proper garnishes. October is mango season where I live in California. Perhaps the season is different where you are. Mangos tend to be overlooked during the fall, as many of our favorite fruits go out of season. I love the fall color of mangos, as well as their flavor. I hope you, and possibly your guests, enjoy this savory fruit salad recipe. My husband is not big on fruit salad, but he really enjoyed this one (probably because of the cherries!) Have fun and enjoy! Continue reading “Savory Fruit Salad: Mango and Dried Cherry”

Gluten Free Cucumber Salad with Creamy Dill Salad Dressing

Image: Cucumber Salad with Dill Dressing

When I visited Los Angeles in the past, I loved going to a this little hole in the wall Greek restaurant that served a great cucumber salad with a creamy dill dressing. I had to recreate it! I don’t know why I didn’t years ago. It is wonderful!  I did however use green onions instead of yellow onions and I like it much better! They did not use carrots, but I like a little color once in awhile. You can use a gluten-free Greek yogurt or sour cream. Leftovers taste even better! If you like Thousand Island Dressing, but are on a low carb diet or are seeking one without tomato (catchup) this is a great recipe! Below you will find a dressing that tastes and looks like thousand island, but is low carb and a healthier choice. My husband and daughter were leery of trying it, but found it tastes just like the real thing! Chocolate Almond Milk Ice Cream Recipe

Chocolate Almond Milk ice Cream Recipe

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose. Gluten Free Strawberry Chicken Salad

Image: Gluten Free Strawberry Chicken Salad Ingredients

I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in my apple chicken salad recipe, it sweetens up just right. You can use this chicken salad atop a salad, in a sandwich, or on celery sticks or crackers for an appetizer. This recipe is gluten-free, sugar-free and low-cal if you use non-fat Greek yogurt instead of mayonnaise. A mixture of both is great, too! Continue reading “Gluten Free Strawberry Chicken Salad”

Gluten Free Non-Fat Gourmet Greek Yogurt Salad Dressing Recipe

Several weeks ago I discovered a salad dressing (do not recall where) and thought to myself, “Wow, I bet I can make a Greek yogurt salad dressing similar that that and save a ton of calories!” Well, I made it, changed a couple things of around. It needed a bit of sweetness and I was out of red onion, so I add a few pinches of stevia and some onion powder, and voila! – a great gourmet salad dressing!
