To make a great-tasting gluten free chow mein recipe you need the same ingredients as its gluten counterpart. It’s all in the quality of noodles you use. I use brown rice spaghetti; however, using spaghetti containing corn is more authentic. Heartland’s gluten free spaghetti is excellent. Gluten Free Chow Mein Recipe with Chicken

Gluten Free Chow Mein Recipe with Chicken

Gluten free chow mein with chicken, in its basic form, containing easy to obtain ingredients. Use your favorite vegetables.

Ingredients:

  • 1/2 lb. gluten-free brown rice spaghetti (or a GF brand containing corn)
  • 1/2 teaspoon sesame oil
  • 1 Tablespoons cooking oil
  • 1 1/2 lbs. boneless skinless chicken breasts, cubed
  • 1 Tablespoon dark sesame oil*
  • 4 medium carrots, thinly sliced
  • 6 green onions, whites only, thinly sliced (reserve greens for garnish) (or 3/4 cup chopped yellow onion)
  • 1 1/2 cups sliced celery
  • 1/2 cup frozen spinach, thawed (or bok choy, cooked and drained)
  • 1 clove garlic, minced or grated
  • 1 cup low-sodium gluten-free chicken broth
  • 1/3 cup gluten-free low-sodium soy sauce (or San-J Tamari Sauce)
  • 1 Tablespoon granulated sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 2 Tablespoons + 2 teaspoons cornstarch (or potato starch)
  • 2 Tablespoons + 2 teaspoons water

Instructions:

  1. Boil spaghetti according to manufacturer's instructions. Drain, toss with 1/2 teaspoon sesame oil and set aside.
  2. Preheat a wok or heavy skillet over medium-high heat with neutral flavored cooking oil. Add chicken and cook until brown, about 5 minutes. Remove chicken and set aside.
  3. Add sesame oil and heat until hot.
  4. Add carrots and saute for 4 minutes.
  5. Add onion and celery and saute for until onion is tender, about 5 minutes.
  6. Add spinach and garlic and saute long enough to heat, about 1 minute.
  7. Add chicken broth, soy sauce, sugar, ginger, pepper flakes, and bring to a boil.
  8. Mix cornstarch with equal amounts of cold water and pour into the sauce, whisking as you pour.
  9. Return chicken to pan, stir and heat long enough to warm the chicken.
  10. Toss with gluten free pasta and allow noodles to absorb the sauce for about 5 minutes.
  11. Serve alone, or topped with crunchy chow menu noodles, see the above link.

Tips

*If you have hot chili oil, use 1/2 teaspoon of it to replace the sesame oil and omit the red pepper flakes. Chili oil is what I use, but not everyone can find it.

You can add any vegetables you desire: snow peas, yellow onion, green or red bell pepper, or even water chestnuts.

Gluten Free Cauliflower au Gratin

Cauliflower au gratin is a great way to get that same rich, cheesy texture with a vegetable instead of potatoes. It reduces some of the carbs, as well. Though the calories in this dish are pretty high as it uses tons of cheese and cream. However, it makes a great dish for guests. Everything in moderation, right? This dish is a bit more saucier than au gratin potatoes as it does not take cauliflower as long to bake as potatoes. However extra sauce is not a bad thing at all. Lower-Fat Gluten Free Coleslaw

Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt. Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! Gluten Free Spaghetti and Meatballs

This recipe brings back fond memories of our traditional Sunday Italian dinner at my grandmother’s house when I was a child. Though Grandma didn’t make gluten free spaghetti and meatballs, this recipe tastes just the same. All you need is good tasting gluten free bread crumbs (there are some bad ones out there) or gluten free oat flour. You can make this recipe to serve a crowd, or freeze most of it for future use. I usually make it ahead of time and freeze it in several different size contains: individual, two servings, four servings and one large one. Then I am prepared for unexpected guests or when I just don’t have the time to cook for my hubby. Creamy Saucy Gluten Free Black Bean Chicken Chili

I have to say, this is the best chili I have ever eaten! It reminds me of ham and beans, made with fresh ham. It is very flavorful, and is made without chili powder and without tomatoes. Due to the amount of cumin it is on the mild spicy side. To make it kid-friendly, cut back on the cumin, and add additional salt. Gluten Free Frittata with Spinach Potato and Cheese

If you’re serving Easter brunch, this gluten free frittata would make an excellent addition to your menu. You may multiple the ingredients and make it in a large dish to feed a crowd. Some become confused with similar recipes such as a quiche or omelette. An omelette is folded, a quiche contains a crust, and a frittata is usually mixed up with the added ingredients. You may add meat, vegetables, cheese, pasta, potatoes and more to any of the above. They are delicious. I find a quiche to be more appealing, aesthetically, though you can create a very aesthetic frittata, as well. I provide the technique below. Enjoy!
