One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? Or would that cause the temperature of the oil to drop too much? Gluten Free Cracker Recipe: Whole Grain
This was my first attempt at creating a gluten free cracker recipe. I was really anchoring for a healthy gluten-free snack made from whole grains. They compliment a dip very well. Avocado and hummus are my faves! They have a bit of a nutty flavor due to the teff and millet flours, a great way to get fiber and whole grains. The thinner you roll them, the crispier the cracker. Perhaps you already have a favorite gluten free cracker recipe. And perhaps and this will inspire you to use a little whole grains in it next time. Enjoy!

Berry Cheesecake Gluten Free Pancakes
In an attempt to use up some cream cheese I had in the refrigerator, I thought about creating a cream cheese gluten free pancakes recipe. At first, I thought of just spreading the cream cheese between the pancakes. Then I thought, what about if I could taste gooey chunks of cream cheese in the middle? – and then top them with strawberries, blueberries or blackberries? That would make a cheesecake pancake! I ended up adding some to the batter creamed, and the rest in chunks. Oh my! – very filling and much like a dessert without all the refined sugar!

Gluten Free Cookie Recipe: Pear and Walnuts
Wanting to experiment with new gluten-free flours and grains, I picked up some of Bob’s Red Mill organic amaranth flour and amaranth grains to create a new gluten free cookie recipe. I have been wanting to find a healthy snack besides premade protein bars, and amaranth (a seed) is rich in protein (15-17% by weight). Compared to other grains, it is the richest in lysine and the highest in fiber (3 times wheat). It is also loaded with vitamins and minerals. Gluten Free Oat Bread Recipe with Cinnamon and Cranberries
My husband loves raisin bread, but I haven’t made him any since I have been gluten free. He used to make his own using the bread machine. I wanted to make him a gluten free oat bread recipe with raisins this morning, but I was out of raisins (used them in the gluten-free oatmeal cookies I made for him last weekend). I don’t care for raisins anyway, so I used dried cranberries instead. Oh! – it turned out so good! My hubby was very pleased, as well. I’m looking forward to adding walnuts next time, though the hubby is not a big nut fan. I also used Expandex® in this recipe, but you can make it without the Expandex by substituting additional oat flour. However, it will come out a little heavier. Perhaps adding an additional egg white may help, too, if you skip the Expandex. I can picture a chicken or turkey sandwich, possibly with cream cheese. Yum! It also makes a great snack! Gluten Free Baked Cheese Puff Balls
I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light. Gluten Free Spicy Indian Fries

Savory Fruit Salad: Mango and Dried Cherry
Of course this fruit salad is gluten free, but it does not take special ingredients to make this recipe. It is fast to make, yet elegant to serve, with proper garnishes. October is mango season where I live in California. Perhaps the season is different where you are. Mangos tend to be overlooked during the fall, as many of our favorite fruits go out of season.
