mmuHummus is naturally gluten free, however, adding a wrong ingredient can send someone with a high gluten-intolerance into a world spin. This gluten free hummus is sweetened with pineapple juice and vinegar (due to my citrus allergies) rather than lemon juice, but feel free to use either. Hummus does not keep well. Therefore, ensure its refrigeration as soon as possible. I made some homemade gluten-free tortilla chips which was a wonderful compliment to this gluten-free hummus, as they were nice and spicy! Gluten Free Pop Tarts – Style Pastries

Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)

These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Gooey Gluten Free Brownies Recipe

Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Danna Korn and Connie Sarros, the authors of Gluten-Free Cooking For Dummies have already contributed a Gluten Free Honey Cinnamon Grahams recipe to this site, but I have had many requests for a more traditional gluten free graham crackers recipe using more traditional gluten free flours. Fresh Fruit Heals Leaky Gut

The best recipes for a leaky gut contain whole foods (unprocessed foods), but some in particular. Perhaps you’re sick of fruit and are now going for those high carb snacks. I think we all have gone through the feeling of being deprived when we first start a gluten free diet, though once you find your favorite brands of gluten free baked goods, including bread, all hell breaks loose on the scale, at least those of us who have healed already. This is why I have been concentrating on finding a more healthy gluten free snack. Though I don’t ever think I’ll give up perfecting gluten free baked recipes. Everything in moderation, right? So, while your gut is still healing, ditch those high carb baked goods and reach recipes for leaky gut such as those containing high complex carbohydrates: legumes (if tolerated), fresh vegetables and fresh fruit. With the hot weather we’ve been having, I thought I would make a no-bake dessert. Nanaimo bars are a Canadian treat. I substituted the traditional packaged pudding (or packaged pastry cream, depending upon brand) with gluten-free cream cheese (just 2 tablespoons). You can always use your own homemade custard. Mothers and grandmothers used to make these for their kids beginning in the 50’s and 60’s, and some still do. I made them without coconut, due to food allergies. Shredded coconut is usually used in the bottom layer. I substituted coarsely chopped almond meal. You can use regular. I just ground my own. Sugar Free Dairy Free Gluten Free Doughnuts – Baked

I haven’t had a doughnut (donut) since I started my gluten-free diet. I didn’t really miss them, but enjoy the challenge of gluten-free baking. These gluten free doughnuts are baked, making them healthier than the standard recipes, as they are usually deep fried. In addition, some whole grain flours were used to provide additional health benefits, as well as agave and molasses. They taste much like the real thing! I think you’ll be very pleased. You can play around with this recipe substituting 1/4 cup of your favorite flour for one of the others. Add in your favorite baking seasonings or extracts, too. Experiment and have fun! Gluten Free Pizza Crust made with Polenta

While flipping through Food & Wine magazine I noticed a photo of a polenta pizza crust and suddenly found my mouth watering. I love polenta and pizza, but combining them is an ideal gluten free pizza crust for yours truly! Making gluten free polenta pizza crust is very easy. My husband and I were able to enjoy two different pizzas, both which cooked together in the oven. How simple is that?
