Gluten Free Agave Popcorn Balls

Image: Gluten Free Agave Popcorn Balls

Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup. This is a great recipe to use up your left over popcorn, too! I am sure kids will enjoy this sweet treat! Continue reading “Gluten Free Agave Popcorn Balls”

Baked French Fry Recipe

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise from the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries.  Continue reading “Baked French Fry Recipe”

Gluten Free Raw Fudge

Gluten Free Raw Fudge

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. This raw fudge makes a great dessert, as well as a snack, and is also low-sodium, low-fat, vegan, gluten-free and dairy-free dessert. And healthy, too! Continue reading “Gluten Free Raw Fudge”

Gluten Free Onion Rings Recipe II

This gluten free onion rings recipe is sweetened with stevia, salted with sea salt and dairy- free. UPDATE: I now use Gluten Free Chef Rob’s recipe which calls for gluten-free beer. However, you can make it almost just as good using sparkling water. It just has a little less flavor and you have to fry them longer to make them crispy. They’re super crispy! Here’s the link – Tri-Spiced Gluten Free Onion Rings with Dipping Sauce.

Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!

Sweet and Spicy Gluten Free Pickles

I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole. I hope you enjoy the recipe. Continue reading “Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!”
