Apple Corn Cake and Stewed Blueberries – like a soft polenta cake

Image: Gluten Free Apple Corn Cake

I was watching Chef Emeril Lagasse on The Martha Stewart’s Show and he had my mouth watering when he made a corn cake, similar to a polenta cake, often made in restaurants as a side dish, topped with stewed cherries. I was determined to make my own gluten free version, but healthier. I made it with blueberries; without refined sugar, and sweetened it with applesauce and a tiny bit of agave syrup; used one less egg and added applesauce instead of sugar and lemon zest, making it like a bread pudding. Thin Gluten Free Pizza Crust that tastes good!

Gluten Free Pizza Slice with Thin Crust

After surveying a few people yesterday, it seems that one of the popular gluten-free items is pizza. I have only tried creating a gluten free pizza crust recipe once before, but it did not turn out well. Well, today my husband, who eats gluten, says I have successfully made a great gluten free pizza crust. Yeah!!! He’s my taster. If he likes something gluten free then I know I’ve done well. Cheesecake Stuffed Strawberries – Gluten Free Sugar Free!

Image: Cream Cheese Stuffed Strawberries

I was watching Paula Deen the other day and her son was on her show and made stuffed strawberries with cream cheese and powdered sugar. I made them, too, as a gluten free sugar-free recipe! I can’t think of anything that I would enjoy more on a hot summer day, and did! I had so much fun testing this recipe using different sweeteners. I didn’t care for them with agave but enjoyed them with powdered sugar and stevia. Surprisingly, I liked these strawberries better with stevia. I hope you enjoy these, too! Gluten Free Roasted Garlic Walnut Pesto

Gluten Free Walnut Pesto

I wanted to make a walnut paste to be used on pasta or when chilled even on crackers or celery, but the recipes I found contain raw garlic. I really wanted to make a walnut paste with roasted garlic, therefore, I began a new experiment. I thought about using pine nuts, but I wanted to create something yummy for everyone that was affordable. You make this as a paste or as a walnut pesto sauce. Gluten Free Lentil Soup with Bacon

Gluten Free Lentil Soup with Bacon

Stop the presses! This is my all time favorite out of all of my gluten free soup recipes! I love anything with bacon, but try to not eat it too often, as most of them contain many preservatives, not to mention the calories. I am having overnight company in about a week and decided to make my famous lentil bacon soup. Kids love it as well as adults. Who doesn’t like bacon, right? I am sure they exist, but it is as many who do not like chocolate. Continue reading “Gluten Free Lentil Soup with Bacon”

Gluten Free Brioche

Gluten Free Brioche Buns

Brioche is reminiscent of the first breads ever made. When Marie-Antoinette said, “Let them eat cake!” she was referring to a bread much like brioche, in between an egg bread and cake. I watched Martha Stewart make brioche buns on her Friday, April 30, 2010 episode, and I just had to figure out a way of making a gluten-free brioche. With a few alterations I had much success! They rose very nicely. This gluten free brioche recipe is a sweet, buttery, spongy egg bread and is like nothing I have ever eaten – an experience everyone should have at least once. This recipe is much faster to make than typical brioche. You do not have to wait several times for the dough to rise, especially the one you wait for overnight. No one would ever guess this is a gluten free brioche, as it does not taste grainy. You may serve it as a dessert or with a meal just as you would serve corn bread. Brioche is very popular in New Orleans. Continue reading “Gluten Free Brioche”

Gluten Free Avocado Chicken Salad

Avocado Chicken Salad

I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. And it’s great for using up leftover chicken. You’ll see the sandwich photo below which shows the dairy-free version, and the salad photo showing the dairy version Continue reading “Gluten Free Avocado Chicken Salad”

Low Fat Healthy Baked French Fries

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. You may use russet potatoes, sweet potatoes, or golden or red potatoes. Guilt free French fries! What’s not to enjoy? Continue reading “Low Fat Healthy Baked French Fries”
