Single Serve Gluten Free Microwave Cheesecake
Whoever thought you could make a gluten free microwave cheesecake? You can! Though this is one of those recipes that varies per microwave and per your tastes. However, when you’re craving something sweet and want to make dessert for one, this may work for you. We love it in our house! It’s a bit pastier than a traditional cheesecake, but with my homemade graham cracker crumbs and your favorite cheesecake topping, it’s scrumptious. I had my recipe testers for my upcoming cookbook test this recipe. The majority of the testers enjoyed it. Some had to adjust the cooking times or temperature. You may have to experiment depending upon the wattage of your microwave. Meanwhile, once you have your graham crackers made or purchased, it’s easy to make this gluten free microwave cheesecake. Gluten Free Asparagus Tomato Cheese Tarlets or Tarts
- With this gluten free cheese tartlet recipe, you can use a combination of different vegetables. Rather than blanching asparagus, blanch some broccoli spears or green beans. You can use any vegetable that doesn’t contain a lot of water. The crust is flaky. It’s perfect for brunch!

Gluten Free Enchilada Casserole with Homemade Tortillas or Store-Bought
Imagine gooey, stretchy cheese, creamy beans (red or black), and tortillas that actually taste like real tortillas. Then add some enchilada sauce, red or green. What is it? My gluten free enchilada casserole recipe! You can use store-bought tortillas. Rudi’s makes excellent gluten free tortillas. You can roll them and they don’t break. I imagine other brands are available as well. I haven’t tasted Udi’s yet. However, I supply you with several homemade recipe choices in the tips section. My fave is gluten free naan, thinly rolled. Gourmet Gluten Free Chili Recipe with Bacon
I hadn’t made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. He enjoyed this recipe so much, I had to share it with it you. However, to be honest, he loves all of my gluten free chili recipes, which most are tomato-free. Gluten Free Tartiflette – Better Than Au Gratin Potatoes
Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort. Gluten Free Oat Milk Recipe
While you can purchase oat milk in your local grocery store, the oats used in that milk is most likely not gluten free. Due to oats growing in fields adjacent to gluten crops and multiple other reasons, regular oats can contain up to 10% gluten. You can make your own gluten free oat milk at home. It’s easy and less expensive. I notice a quart of organic oat milk costs $3.49 at my local grocery store. You may not be able to find organic oats, but you can make a quart and half for a little over $1.00; and it won’t contain any gum.
