After going out to dinner recently, I decided to make my husband what he doesn’t get too often at home, homemade garlic bread. Apricot Cherry Gluten Free Streusel Coffee Cake Recipe (or Tart)
Last month, I used my butter cake recipe to make this beautiful gluten free streusel coffee cake recipe. I just added fresh fruit and streusel topping. Instead of using my usual Gluten Free All Purpose Flour Blend Recipe in the topping, I used my Self-Rising Cake Flour Blend Recipe. It created a higher rise and lighter topping. If you prefer, you can use the same flour as you do in the cake. In addition, you can create a tart instead of a cake, omit the streusel and dust it with confectioners’ sugar (see the photo below the recipe.) Enjoy! Soft Gluten Free Buttermilk Dinner Rolls
I developed a soft gluten free dinner rolls recipe made with rice flour quite awhile ago. That recipe can also be made dairy free, if desired. I used buttermilk in that recipe. The recipe below, is more substantial as it has more structure. Though light in weight, it is not as light as the dairy-free version. With the use of buttermilk, they are a creamy goodness that my husband and I couldn’t stop eating at just one this afternoon. Enjoy!
En Papillote: Cooking in Parchment Paper Without Oil
The summer season is almost over. Now it’s time to lose a few pounds before the holidays hit us hard (at least for me). En papillote is a method of cooking that omits oil and other fats such as butter. Instead, you steam-bake the items, seasonings, and if desired, a small amount of broth or wine, in parchment paper. (Aluminum foil is avoided as it can leach into your food.) The natural juices of poultry, fish, vegetables and fruit entwine and develop amazing flavor without oil or fat. You can steam-bake vegetables by themselves, too. Be sure to read the “Tips” section below to find out how to make my favorite en papillote chicken recipe.
En papillote cooking is so easy, you have to try it once and you’ll be hooked! It can turn pungent fish such as mackerel into a delightful and healthful dish. You can even make low-carb dishes by substituting starch (rice, potatoes, pasta and bread) for additional veggies.

Gluten Free Coffee Semifreddo
Ice cream makers are perfect for making semifreddos, a semi-frozen dessert. Coffee semifreddo is a dessert I enjoy serving dinner guests for a little pick-me-up/caffeine boost, thought it is lightly flavored. You can make the pudding in advance and keep refrigerated. Then about 20 minutes prior to serving, freeze it up in your ice cream maker and fold in the whipped cream. Those who do not make homemade desserts are usually fascinated with the process and thoroughly enjoy this light treat. You can vary the recipe by adding various mix-ins.
