Gluten Free Malaysian Chicken Satay (Fish-Free, Dairy-Free, Refined Sugar-Free Options)

What can you place on a stick to eat besides shish kebobs and corn dogs? Chicken satay! Satay originated in Indonesia, but there are also Asian versions. Satay is different than shish kabobs, mainly in the sauce. Instead of barbecue sauce and such, Thai satay recipes call for coconut milk and curry. Indonesia satay, also known as sate ayam, calls for ketchup or tomato sauce and sugar. Malaysian satay calls for such ingredients as belacan (shrimp paste), galangal (a relative of ginger), and lemon grass, which are not available to everyone. This is my own unique gluten free, soy free, Malaysian version of satay using more commonly known ingredients. You may use chicken or a tender cut of beef or pork. Pork tenderloin is wonderful! Gluten Free Bars – Apple Walnut (Sugar-Free)

I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. My husband signed me up to bring baked beans to the family reunion. Therefore, I made gluten free baked beans. I’m allergic to tomatoes and haven’t had Van de Camp beans in ages, as it has tomatoes. However, Bush’s baked beans are tomato-free. Yes! I haven’t made these in decades! My husband’s idea was for bacon to be added. And since I’m a worry-wort as far as never making enough, I went for it, as it added volume to the recipe. And I’m really happy that I did, as it was a perfect addition, as far as flavor goes. And you skip the bacon if you’re watching your weight or cholesterol levels. The onion, garlic and bell pepper provides enough flavor. I hope you appreciate this recipe. My husband was delighted! Gluten Free Rosemary Chicken

This rosemary chicken is another healthy, gluten free recipe contributed by Joy Bauer from her celiac disease recipe collection. Whether you grill it outdoors or use a grilling pan, this chicken recipe is almost like having breaded chicken. It has a wonderful crunch to it. Yet there are no bread or bread crumbs involved, making it low in carbs. And because you don’t use much oil, it’s low in calories, as well. Gluten Free Dairy Free Almond Avocado Pesto

This is one of those gluten free recipes that truly tastes spectacular. I have stopped using pine nuts in my pesto awhile ago. Almonds provide much more flavor. I have been searching for a way of creating a creamy dairy-free pesto and I finally figured how to achieve it, with avocado! I’m an avocado lover and am always on the lookout on how to use them in new ways. My husband, however, is not a fan of avocados, so I just split the recipe in half and make one with avocado and other half with 1/4 cup Parmesan cheese, as in my Gluten Free Almond Pesto recipe. Because pesto is raw, you can use it on vegetable pasta for a gluten free raw dish, as well. Avocado pesto – I’m hooked, and I bet you will be, too. Sugar-Free Gluten Free Chocolate Parfait

I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup. Gluten Free Potato Gnocchi with a Bacon and Basil Ragu

You may have already tried my father’s neighbor’s Gluten Free Gnocchi Recipe, but this was tastes so much lighter, and less starchy. It’s made with gluten-free flour and riced potatoes. Oh my, my husband and I were in heaven! I laid it on a stripe of store-bought cream basil sauce and topped it off with a bacon and basil ragu. I would have thought were in a 5-star restaurant if I don’t say so myself. And the nice thing about the ragu is that you can use your favorite gluten free cold cut, pastrami, salami, etc. You don’t have to use bacon.
