Gluten Free Pumpkin Biscotti (or Sweet Potato) (Dairy Free)

Gluten Free Pumpkin Biscotti Cookies

My grandmother and mother used to make biscotti (Italian cookies), but I never enjoyed them until I made my own, gluten free, of course! These gluten free pumpkin biscotti may be filled with dried fruit and/or nuts, or not. Did I hear, “Amazing”? Why, yes, I did! Use pumpkin puree or pureed sweet potatoes. Either way, they’re delicious! Nuts and dried fruit are optional. You can even dip them in melted chocolate.

High Protein Gluten Free Bread (Machine or Oven)

Molasses Sweetened High Protein Gluten Free Bread

If you’re looking for high protein gluten free bread that is soft and provides options for sweeteners such as sugar, honey, molasses, or maple syrup, this is the bread for you!  I boosted the protein with seeds that are the highest level, providing an additional gram of protein per slice when compared to my oat bread recipe. Oat is the highest protein gluten free flour other than ground nuts.

Gluten Free Cauliflower Pizza Crust (Low-Carb)

Flourless Gluten Free Cauliflower Pizza Crust

A member asked me for a gluten free cauliflower pizza crust. So, I finalized the one I have been working on. This pizza crust is low-carb as it does not contain flour. I added a secret ingredient that I’m sure you have in your pantry.  Just in case you don’t, I provide you with a basic substitute so that your pizza crust turns out fluffy instead of dense like others. Gluten Free Chocolate Marshmallow Sundae Cupcakes

Gluten Free Chocolate Marshmallow Sundae Cupcakes

I kept craving Ding Dongs. Remember those? They are a small disk-shaped chocolate cake, almost like a cupcake but not as high. They are filled with marshmallow fluff and covered in chocolate? It hit me! Why not use lots of marshmallow fluff? Since my marshmallow fluff basically melts in your mouth, you need much more versus the original Ding Dongs. Voila! This is what I ended up with. Deliciousness!! Decorated like sundaes, they make nice gifts as well. Continue reading “Gluten Free Chocolate Marshmallow Sundae Cupcakes”

Marshmallow Fluff Gluten Free (Corn Free Option)

Gluten Free Marshmallow Fluff

This marshmallow fluff gluten-free recipe with a corn free option is a light and fluffy marshmallow cream filling you can use to fill gluten free desserts. While I already have a Marshmallow Creme Frosting/Filling Recipe, I needed something a little stiffer to fill my Gluten Free Mallomars that I recently made. (Recipe to come today.) This worked out perfectly. It is lighter and fluffier than store-bought marshmallows, which allows them to melt in your mouth! They taste creamier, better than marshmallows and are a good way to use up leftover egg whites. Continue reading “Marshmallow Fluff Gluten Free (Corn Free Option)”
