Custard is my favorite dessert next to ice cream and this one is my favorite, as it is a custard recipe for cream puffs! I also use it for creme brulee. It’s a great all-purpose gluten free custard, without the use of any flour. I created a Gluten Free Cream Puff Recipe yesterday upon the request of one of my readers and for my father who is visiting me. He’s Italian and cannot resist a cream puff, even a gluten free cream puff! A matter of fact, I had my best shaped cream puff on the table and had left the room. Upon returning, I found the cream puff in his mouth! I told him I was saving that one to fill and needed to take a picture of it. He said, “The damage is done!” and laughed! We both laughed. My father is 100% Italian and cream puffs are a delicacy. He loved that one but loved the ones I later filled even more. I like baking with red apples as it allows me to use less sugar in a recipe. I created a gluten free pastry recipe with red apples versus green. You can use any apples you desire and adjust the sugar content accordingly. I used my gluten free old cream puff shell recipe but made the shells more shallow. This recipe is dairy free. I had a nice ripe mango waiting for me, but I was in the mood something more creamy. The raw almond milk ice cream that I made with avocado came out wonderful, but raw almond milk ice cream with mango is very refreshing and so healthy, too! I wasn’t sure to call it dairy free sherbet or ice cream, but it tastes great! Next time I am definitely skipping the sweetener and adding bananas! Gluten Free Pound Cake

One of my Facebook friends requested a recipe for a gluten free pound cake. This recipe is my first attempt. I love pound cake and have not made one or tasted one in years. It rose perfectly. It turned out just a tad grainy (not as bad once it cools) because I had added 1/4 cup brown rice flour. Rice flour tends to be grainy. I have substituted the brown rice flour for additional tapioca flour in the recipe below. That should make it nice and starchy like a good pound cake (UPDATE: See feedback from a reader below.) I suggest to use regular white sugar instead of the organic evaporated sugar. It gives it a different taste. At 1 hour the cake was not done baking. I left it in for 10 minutes longer, but that was too long. Time got away from me. I suggested 1 hour to 1 hour 5 minutes total. At 1 hour and 10 minutes, it did not make the cake dry, but the outside was a little harder than I wanted. I fixed that by wrapping it in foil where the steam softened it right up. Not bad for attempt number one. My suggested changes are below. I was trying to go a little healthier, but it did not work as planned. This is a heavy pound cake, but oh so delicious! Enjoy. I had quite a bit of leftover white rice and happened to see a restaurant featured on television that shared a portion of their ingredients for rice pudding except for one secret ingredient. And it is naturally gluten free. It looked as if it contained warm maple syrup; and the host of show said it tasted like french toast. I just had to try to make it. Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

I was sent a couple of items from Namaste Foods to sample. The one I recently tried was their Biscuits, Pie Crust and More! Flour Blend which also makes dumplings, shortcake and coffee cake. The package had several recipes including an orange cranberry coffee cake recipe. Unfortunately, I am allergic to citrus and had to substitute the orange juice for applesauce and added more cinnamon (yum!) – very moist! I have included my recipe along with the recommended ingredients and instructions (see “versus…”). I recommend this mix, as it is close to Bisquick and I bet will make some very good recipes besides this one. I can’t wait to try the pie crust! The coffee cake rose beautifully, even with all of that heavy applesauce! This recipe is gluten-free, casein free, (egg-free if you use an egg substitute), and (nut free, if you skip the walnuts on top).
