Gluten Free Strawberry Shortcake Ice Cream

Traditional strawberry shortcake recipes are made with layers of angel food cake with a layer of whipped cream or strawberries and topped with one of the same. I used a plain gluten-free cookie recipe to line a ramekin; baked it; and tossed it in the freezer for a couple of hours. Once frozen I made some homemade vanilla ice cream; added a layer of it on top of the cookie; then a layer of strawberries in syrup; then another layer of ice cream; topped it all with sweetened gluten-free whipped cream and slices of frozen strawberries; and froze. Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. My mother made a few southern dishes that were family favorites. It’s been years since I made my mom’s red beans and rice recipe, but this time I changed things around, making it lower in sodium and by adding a little kick to heat it up a little. With or without heat, these beans are very flavorful. My mother use to always make them using a ham bone with lots of meat left on it. When not available she would use a ham hock, but didn’t like the additional fat, and I agree. To lessen the sodium content, I used very lean, very thin pork chops cut into bite sized pieces. When I tasted it, I could have sworn it was ham without all the salt! If you on a low sodium diet use the chops; if not use a ham bone if you can find one. My gluten free spaghetti sauce recipe is a bit of a modern version of the authentic Italian spaghetti sauce that my Sicilian grandmother used to make. I have included both the authentic ingredients as well as a few shortcuts I take. I sometimes use dried parsley, canned mushrooms, etc. You can use all fresh ingredients or opt to take the shortcuts, but they both taste wonderful. I really wanted to make a walnut paste with roasted garlic, therefore, I began a new experiment. I love anything with bacon, but try to not eat it too often, as most of them contain many preservatives, not to mention the calories. Brioche is reminiscent of the first breads ever made. When Marie-Antoinette said, “Let them eat cake!” she was referring to a bread much like brioche, in between an egg bread and cake. I watched Martha Stewart make brioche buns on her Friday, April 30, 2010 episode, and I just had to figure out a way of making a gluten-free brioche. With a few alterations I had much success! They rose very nicely. This gluten free brioche recipe is a sweet, buttery, spongy egg bread and is like nothing I have ever eaten – an experience everyone should have at least once. This recipe is much faster to make than typical brioche. You do not have to wait several times for the dough to rise, especially the one you wait for overnight. No one would ever guess this is a gluten free brioche, as it does not taste grainy. You may serve it as a dessert or with a meal just as you would serve corn bread. Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. I saw another great dessert on Martha Stewart’s Show last week, Corn Muffins with Pear and Candied Ginger. Of course, I had to create a gluten free muffin recipe version. It does not call for superfine rice flour. The original recipe called for candied ginger which did not sound appealing to me, but I will never know, as I did not have any on hand. The recipe below calls for many ingredients, but is fairly simple to make. This is the best gluten free muffin recipe I have ever made or ever tasted – straight out of the oven and when cooled.
