Gluten Free Guacamole (Tomato Free)

Image: Gluten-Free Tomato-Free Guacamole Dip

With my food allergies, tomatoes or salsa is a big no-no! I always make this tomato free gluten free guacamole when I make Mexican food or just want a creamy dip for tortilla chips. You don’t have to make this recipe without tomatoes, though. You can easily replace the chipotle sauce with a little salsa, and it’s just as easily made. However, this no tomato, gluten free guacamole was enjoyed by guests who are tomato tolerant. Salsa on the side easily appeased all. Continue reading “Gluten Free Guacamole (Tomato Free)”

Gluten Free Dairy Free Chocolate Ganache or Frosting (Raw)

Avocado Ganache

The main ingredient in this recipe may surprise you. It’s avocado! Yes. Avocado makes a wonderful substitution for fat and egg in many recipes. This dairy free ganache has very few ingredients: avocado, cocoa powder and agave syrup. Use it to frost cakes, cupcakes, donuts, fill pastries and more. It’s so rich, you’ll never go back to heavy whipping again! Continue reading “Gluten Free Dairy Free Chocolate Ganache or Frosting (Raw)”

Gluten Free Potato Dumplings and Chicken

Gluten Free Chicken and Dumplings

Contemplating my next blog post recipe, I first asked myself, what would my husband enjoy that I have never made. Gluten free dumplings was my answer! Something starchy, with gravy would hit the spot on this cold, snowy winter’s day. However, I just could not imagine making a gluten free dumpling out of gluten free flour. It would just be a ball of starch. Therefore, I went with mashed potatoes. They make gluten free dumplings you’d be proud to serve your gluten eating guests. Gluten Free Fried Bananas

Fried Bananas (Naturally Gluten Free)

Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! Chocolate Gluten Free Caramel Sauce

Image: Gluten Free Chocolate Caramel Sauce

The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Gluten Free Dulce de Leche Recipe (Caramel Sauce)

Dulce de Leche - Naturally Gluten Free

I keep hearing rave reviews about every homemade dulce de leche recipe (thickened, sweetened milk). I even read one review that stated, “the only thing I would trade chocolate for.” I knew I just had to make some. It’s much like a caramel sauce, but not as sweet and without the concern of barley malt sometimes found in caramel coloring. However, caramel coloring is usually made from corn. That’s another thing I like to avoid when at all possible, corn, and especially corn syrup which is sometimes called for in a dulce de leche recipe. Carla’s Gluten Free All Purpose Flour Blend

Gluten Free All Purpose Flour Blend

If you’ve tried different brands of gluten free all-purpose flour and were disappointed with the results or said to yourself, “I guess this is good for gluten free” then you’re in for a pleasant surprise. Users prefer this recipe for homemade gluten free all-purpose flour over others because of its gluten-like texture. Their friends and family can’t tell the difference. Coconut Whipped Cream – Dairy Free

Gluten Free Cake with Dairy Free Whipped Cream

This is a wonderful addition to your gluten free desserts! I found a few recipes online for coconut whipped cream, but I could tell that none of them would do the trick. One had it right, though, in using just the cream of a can of coconut milk. Yet it called for regular sugar, versus powdered. If you’re vegan, or prefer not use highly processed powdered sugar, you may consider using powdered evaporated cane sugar. As of last fall, I purchased some at Trader Joe’s. They carry it as “Organic Powdered Sugar”. It comes in a bag. For my gluten free dairy free readers, I hope you enjoy this dairy free recipe! Note: The topping on the cake in the photo below is the coconut whipped cream, not the other layers. Continue reading “Coconut Whipped Cream – Dairy Free”

Gluten Free Green Pea Cake

Image: Gluten Free green Pea Cake

This cake is to die for, especially if you enjoy chocolate and sweetened whipped cream.  But you ask, “Pea flour recipes?” Yes. Peas are part of the legume family, and when ground into a flour may be used in larger quantities than other bean flours, as they are not as strong or bitter and the pea flavor is more easily hidden among other flours. Green pea flour is wonderful to bake with, as it is very high in protein, 4 grams of protein in every 1-1/2 tablespoons. No need to run out and purchase green pea flour. If you own a coffee grinder, just purchase a bag of green split peas at your local grocer and grind them up into a fine powder. If it appears to be gritty, don’t worry. They will break down in the cooking process. Continue reading “Gluten Free Green Pea Cake”
