Gluten Free Cake Pops for Thanksgiving: Chocolate Acorns

Image: Gluten Free Acorn Cake Pops

It is extremely important to use a moist cake recipe when making gluten free cake pops. They turn out much smoother. You can use these cake pops for Thanksgiving as a decoration or as a dessert. In addition, they would make a lovely hostess gift. There’s nothing like bringing something you can actually eat to a dinner party. Acorns are synonymous with fall so I chose to make them this shape versus balls. I think they turned out adorable. I was very pleased. You can use gluten free candy or chopped nuts for he tops. Enjoy! Continue reading “Gluten Free Cake Pops for Thanksgiving: Chocolate Acorns”

Chocolate Nut Brittle Recipe: Without Corn, if Desired

Image: Nut Brittle with Chocolate

While a traditional nut brittle recipe contains the nuts within the brittle, this recipe is topped with nuts and then chocolate. You may make it the traditional way by adding the nuts to the brittle mixture using the instructions in the tip section, if desired. Meanwhile, this nut brittle will have everyone in one those moods of “bet you can’t eat just one”. Continue reading “Chocolate Nut Brittle Recipe: Without Corn, if Desired”

Chewy Gluten Free Chocolate Chip Cookies

Gluten Free Chewy Chocolate Chip Cookies

While I have a few recipes for chocolate chip cookies on this site, they are either double chocolate, soft, or a bit crunchy. This one is your typical chewy gluten free chocolate chip cookies. I don’t know why I haven’t developed a recipe for them earlier as they are one of my favorites. I hope you enjoy this recipe as much as we have.

Chocolate Marquise Recipe: Flourless and Gluten Free

Image: Chocolate Marquise

This velvety chocolate marquise recipe is a European favorite. This cake is topped with whipped cream and surrounded by a mascarpone caramel sauce. The scrumptious sauce is a combination of caramel sauce and creamy mascarpone cheese. It is another European specialty, decadence at its best. (Be sure to check out the Tip section for substitutions and variations.) Continue reading “Chocolate Marquise Recipe: Flourless and Gluten Free”

Chocolate Cherry Gluten Free Trifle Recipe

Image: Gluten Free Trifle with Cherries and Chocolate Brownies

This head-turning, gluten free trifle recipe is both colorful and delicious. The cherry glaze shimmers over the fresh cherries and while the colorful, contrasting colors catch your eye. Instead of using gluten-free sponge cake, I used chocolate brownies. With layers of sweetened whipped cream, the flavors balance perfectly. Use fresh cherries when they are in season, or defrost frozen cherries when not. Another option is to substitute the cherries for another fruit with matching flavored jam. You can easily turn this into a strawberry gluten free trifle recipe. Flourless Gluten Free Chocolate Roll Cake – Roulade

Image: Gluten Free Chocolate Roll Cake - Roulade

I love the fact that this gluten free chocolate roll cake bakes so quickly compared to regular cakes. This recipe especially bakes fast because it does not contain flour. Instead, it contains mostly eggs and chocolate. I was so excited to give this a try I even purchased a jelly roll pan just to make this cake. The pan turned out to be perfect size for so many other things (small batch cookies, cinnamon rolls, sheet cakes, and baking rolls, to name a few.) Meanwhile, the cake turns out light, yet has a rich chocolate flavor. You have a choice of fillings and toppings, one of each may be made dairy-free. I hope you enjoy this recipe. It looks like a huge Hostess Ding Dong. Doesn’t it? You can make it taste it like one, too, if you use the fluffy white frosting as a filling. I prefer cream cheese frosting or whipped cream, though. Gluten-Free Sugar-Free Dairy-Free Chocolate Recipe

Image: Gluten Free Sugar Free Chocolate

Sugar-free chocolate can be expensive, and if you have to find a safe gluten-free brand on top it, it can be even more difficult. With this gluten-free sugar-free chocolate recipe, you can make dark chocolate or chocolate ganache. If you are also on a dairy-free diet, you can still make both. For dairy-free ganache, instead of using heavy whipping cream, you use coconut milk. For the fat in this recipe, you have the option of using shortening (I use organic palm shortening) or coconut oil. Depending upon its use and your dietary needs will determine which ingredients you use. This recipe is low in carbs when not using cream. I hope you enjoy this recipe. It has many uses. You can even break it up to use as chocolate chips in your baked recipes.

Dairy Free Gluten Free Brownies Recipe – Rocky Road Style

Image: Dariy Free Gluten Free Brownies

This gluten free brownies recipe contains marshmallows and walnuts like any rocky road dessert. The marshmallows melt into the batter while it bakes, creating a lighter, almost cake-like texture, but chewier. Once in awhile you’ll get a taste of the marshmallows, which is the characteristic my husband most enjoyed. For a heavier brownie, just cut the baking soda in half. Gluten Free Dark Chocolate Covered Rice Cakes

I have had several requests for healthy gluten free recipes. With summertime here, I thought those of you with children would appreciate some ideas for healthy gluten free snacks.  I remember when I first began my gluten free diet in 2005, I tried a rice cake, and could barely finish it. It was so dry and tasteless. I resorted to snacking on watermelon instead. Things have changed, but I have learned different ways to consume rice cakes. When making these chocolate covered rice cakes, be sure to use a gluten free brand of rice cakes if you are gluten intolerant. I have listed one brand below.
