I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Cheesecake is one of my favorite desserts. However, I’ve been getting a bit more creative as you can just make so many of the same old gluten free cheesecake recipes before you get bored with them. I’m always looking for something different and ran across a Caramel Cheesecake Recipe on the BBC’s website. Though all of the ingredients were listed by weight since the BBC is in Europe, I weighed all of the ingredients and converted into cups for you and made a little change. Gluten Free Pumpkin Cheesecake Filled Chocolates

It’s not only trick or treat time for the kids, but us adults desire treats, as well. Imagine sweetened cream cheese, pumpkin, and graham crackers. What do you get? Pumpkin cheesecake! Then wrap them in chocolate and you get heaven in ball! Alternatively, instead of using ground gluten free graham crackers you can ground chocolate cookies. You can make these pumpkin cheesecake chocolates elegant by topping with candy pearls, drops of colored chocolate or another variety of chocolate, or dip the tops in a second color of chocolate. Today’s recipe is a Chocolate Cheesecake, layered with plain cheesecake and chocolate mint cheesecake, and then swirled with both on top. It looks gorgeous, yet is so easy to create this effect. Cheesecake Stuffed Strawberries – Gluten Free Sugar Free!

I was watching Paula Deen the other day and her son was on her show and made stuffed strawberries with cream cheese and powdered sugar. I made them, too, as a gluten free sugar-free recipe! I can’t think of anything that I would enjoy more on a hot summer day, and did! I had so much fun testing this recipe using different sweeteners. I didn’t care for them with agave but enjoyed them with powdered sugar and stevia. Surprisingly, I liked these strawberries better with stevia. I hope you enjoy these, too!
