Tender Gluten Free Gourmet Boneless Beef Short Ribs – Sweet & Spicy with Wine

We were given a bit of beef recently, just when I wanted to go back to a heavier chicken diet.  How could we say no, right?  In the batch of meat, were over seven pounds of beef short ribs. I am so tired of making half the ribs in barbecue sauce in my crockpot for my husband and the other half plain because of my tomato allergies. I usually end up using a gluten-free, tomato free Worcestershire sauce. In my attempt to come up with an alternative we both can enjoy I turned to one of my favorite sauces, a balsamic reduction. Then I considered a wine sauce.  Why not combine them and add in some sugar or molasses? I had so many ribs they wouldn’t possibly fit in my small crock pot; therefore, I cooked them on the stove top. They came out so yummy, something I would expect in a fine restaurant. I won’t use any other short ribs recipe in the future.

Shirataki Noodle Soup

Shirataki noodles (aka Shirataki Yam Noodles) are considered miracle noodles, as they are gluten-free, calorie-free and contain very little carbohydrates! They contain much glucomannan (soluble) fiber which is nature’s riches source of fiber.  Soluble fiber is suggested for prevention and alleviation of IBS symptoms. Shirataki noodles are made from the Japanese Konjac plant. They make the noodles plain or with tofu. Tofu is supposed to have a closer texture to regular pasta, but is soy based, therefore, I use the plain.  You can throw together a quick soup made with shiratki noodles and whatever else you have on hand. This soup makes a great light lunch! You can use whatever meat you desire. I used grilled chicken breast. Below you will find a brand of gluten-free tamari (soy) sauce and a non-soy based substitute.  In addition, I included a soy sauce substitute recipe!  This is one of my favorite low-calorie gluten free soup recipes. Enjoy! Gluten-free Cranberry Nut Muffins

A little red for a gluten-free Valentine’s Day recipe! These gluten-free cranberry muffins were made without nuts, but I often leave out unnecessary ingredients when testing a recipe for the first time. I am a walnut lover, among others, and really missed them in these muffins. It would have really made a better flavor. Next time I plan on adding an egg yolk, as well, just to add more yellow color. Gluten Free Beef Faijitas

This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. Gluten-Free Steak Marsala with Onion and Mushrooms

One of my favorite entrées is chicken or veal marsala. I had the craving, but no chicken or veal in the house. Oh my!  Onto another experiment I went…and here it is, steak marsala, gluten-free, of course! After making the test recipe for just my husband and I, we had a guest over and I made it again. I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light. Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband’s fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from “Gluten Free Cooking For Dummies®“.  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. While on our at-home vacation I wanted to make a few special dinners. Though this gluten-free pasta recipe is high in calorie, my husband may have ordered this dish at our favorite local Italian Restaurant, Nativo’s. However, we had it at home, all gluten-free!
