Gluten Free Teff Bread

Gluten-free Bread with Teff Flour

My husband is, what he calls, a bread connoisseur. For quite some time he refused to give up regular bread, but he finally enjoyed my Gluten-Free Oat Bread, but only the one which contained Expandex. [Not the case anymore.] I was hoping to create a natural bread, without any modified ingredients that he would enjoy. Along with him, we both have now fallen in love teff flour. When baking with teff flour you only use a little bit along with other flours, as it is a whole grain flour. This recipe not only contains teff, which is very healthy and the smallest grain in the world, but other gluten free flours, as well. When compared to other grains, teff has a much larger percentage of bran and germ, therefore it is very high in dietary fiber, protein and iron. Some state that this flour tastes nutty. Others say it is graham-like. I would say it is sweet and nutty. Continue reading “Gluten Free Teff Bread”

Gluten-Free Breaded Zucchini Kabobs

My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. I will definitely use this zucchini kabobs recipe for entertaining. I hope you enjoy them as much as we did! Continue reading “Gluten-Free Breaded Zucchini Kabobs”

Gluten Free Zucchini Casserole

Gluten-free Zucchini Casserole with cheese

I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! You can eat this as an entire meal. I did, and enjoyed every bite! I hope you do, as well! Continue reading “Gluten Free Zucchini Casserole”

Gluten-Free Basil Grilled Cheese Sandwich

Gluten-free Grilled Basil Cheese Sandwich

Mid business taxes, and in a rush for a quick lunch I popped my head in the frig for a quick gluten-free sandwich and saw some cheddar cheese. I haven’t had a grilled cheese sandwich in a couple of years, but just didn’t want a plain one, but one more on the style of California cuisine. I pictured sautéed onion and roasted peppers, but no time for that! I decided to spread my bread with some basil paste and layer each slice with cheddar cheese and plop it in the frying pan. Great and fast! I loved it, but did miss the sautéed veggies! Just remember, a gluten-free grilled cheese sandwich doesn’t have to be plain. Add any of your faves, including meat, such as chicken, bacon, etc. If you’re in a rush, this one is sure to please!

Gluten Free Italian Sausage Pasta Casserole

Gluten-free Italian Sausage Pasta Casserole

I needed to do a review for Schar’s pasta for my gluten free gift baskets website and decided to create a new gluten free pasta casserole recipe just for the occasion! What’s more Italian than pasta and Italian sausage ? My husband and I not only enjoyed the dish, but Schar’s tagliatele pasta, as well. The pasta contains mainly corn and tastes much like regular, glutenous egg noodle pasta.  It was a real treat!  If you do not eat corn, then by all means use a gluten-free brown rice pasta. Jovial and Tinkyada are the best I’ve ever eaten! Continue reading “Gluten Free Italian Sausage Pasta Casserole”

Gluten Free Cookie Recipe: Pear and Walnuts

Gluten-free Cinnamon Walnut Cookies

Wanting to experiment with new gluten-free flours and grains, I picked up some of Bob’s Red Mill organic amaranth flour and amaranth grains to create a new gluten free cookie recipe. I have been wanting to find a healthy snack besides premade protein bars, and amaranth (a seed) is rich in protein (15-17% by weight). Compared to other grains, it is the richest in lysine and the highest in fiber (3 times wheat). It is also loaded with vitamins and minerals. Gluten Free Oat Bread Recipe with Cinnamon and Cranberries

Gluten-free Cranberry Oat Nut Bread

My husband loves raisin bread, but I haven’t made him any since I have been gluten free. He used to make his own using the bread machine. I wanted to make him a gluten free oat bread recipe with raisins this morning, but I was out of raisins (used them in the gluten-free oatmeal cookies I made for him last weekend). I don’t care for raisins anyway, so I used dried cranberries instead. Oh! – it turned out so good! My hubby was very pleased, as well. I’m looking forward to adding walnuts next time, though the hubby is not a big nut fan. I also used Expandex® in this recipe, but you can make it without the Expandex by substituting additional oat flour. However, it will come out a little heavier. Perhaps adding an additional egg white may help, too, if you skip the Expandex. I can picture a chicken or turkey sandwich, possibly with cream cheese. Yum! It also makes a great snack! Enjoy this gluten free oat bread recipe with cranberries or raisins! Continue reading “Gluten Free Oat Bread Recipe with Cinnamon and Cranberries”

Beets and Pear Salad

Gluten-Free Beet Pear Salad

This fresh beets and pear salad was a delightful change. Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. Gluten Free Chocolate Bark Recipe

Chocolate Bark

If you are a chocolate and a nut lover like I am, you will appreciate this chocolate bark recipe because it is very heavy in the nuts, making it a more nutritious and high protein choice. The chocolate in this recipe can be adjusted to your liking. I used about 2/3 milk chocolate and 1/3 semi-sweet morsels. You can use Enjoy Life semi-sweet chocolate chips to make it gluten-free, dairy-free, peanut-free, soy free, egg free, casein-free, kosher pareve, vegan and artificial-ingredient-free.
