Today is National Blueberry Pie Day! What better way to celebrate it than with a gluten free blueberry pie? You will find the link below to my gluten free double pie crust, which is pretty easy to handle compared to most gluten free pie dough. This makes transferring the crusts a breeze, especially in a double pie crust. If you’re pretty new to pie baking, consider  cutting out shapes and placing it on top, like in this Gluten Free Cherry Pie. I think I’d use smaller stars next time, though. Meanwhile, I hope you get to enjoy some of this delicious blueberry pie, as it is made with fresh blueberries. If you don’t have the time for fresh, use Comstock or Wilderness brand pie fillings. Mocha Frosting – or Coffee (Naturally Gluten Free)

In earlier years I was never a fan of buttercream frosting. However with age we our taste buds change. Actually, I believe we lose some. Since I have experimented with different flavors of frosting, I have come to appreciate them. This mocha frosting is one of my new favorites, especially on a rich chocolate cake. You can easily adjust the recipe to make coffee frosting with the tips provided. The key to a good buttercream frosting is how long you beat it. You want it to be airy and light, similar to mousse. Flourless Gluten Free Almond Cookies with Chocolate Chips

You will find the directions provided below for how to do this yourself in your food processor or Vitamix blender. Soft Potato-Free Corn-Free Gluten Free Bread Recipe (Dairy-Free Option)

I thought it appropriate to create a gluten free bread recipe which is free of both corn and potato since so many of you are intolerant to either or both.  My husband is a breadaholic. He refers to himself as a bread connoisseur. It’s always a compliment when he enjoys my gluten free bread recipes, as he still consumes some gluten food. He enjoyed this one, and I hope you will, too. It’s perfect for young kids as well as adults.

Lemon Panna Cotta (Egg-Free Custard) with Bourbon Sauce (Gluten-Free)

Lemon panna cotta is an Italian, egg-free custard. Panna cotta can be made in several different flavors with an array of sauces. It is often served with biscotti, an Italian biscuit-cookie. You will find this particular recipe to include your choice of plain bourbon sauce or walnut bourbon sauce. I’ve included the recipe for the garnish, candied lemon peel, as well. I hope you enjoy this recipe. It appears to be a lot of work, but if you use plain lemon peel for garnish, it’s done in a snap. I thoroughly enjoyed creating this gluten free white cake recipe as it is so easy to handle when inverting. It is due its many egg whites, which also makes it moist, along with its butter and sugar. You can use your favorite fillings and frosting from fruit purees to sweetened whipped cream and chocolate ganache to fluffy white frosting, or chunks of fruit within the whipped cream.
