Gluten Free Egg Substitutes

Image: Raw Egg

For those who are also completely egg-free, you may find this list of egg substitutes very helpful. There are 3 basic purposes of using egg in a recipe: to moisten, to bind ingredients together, or to leaven (rise). Depending on the purpose, will depend upon the egg substitute used. Using an egg substitute is a great way to lower your cholesterol and calorie intake, as well. I especially like the use of flax seed meal as an egg replacer. Though agar-agar works very well, too, it is quite expensive. I am constantly discovering new gluten free egg substitutes. So check back often. I usually add a dated update for new discoveries.

Gluten Free Salad Dressing for Asian/Chinese Chicken Salad

Gluten-free Asian Salad

Little by little I am attempting to remove all soy from my diet. The one thing that I am still working on is converting some recipes to soy free. Therefore, for this Asian gluten free salad dressing recipe, often known as Chinese chicken salad, I chose to use balsamic vinegar instead of rice vinegar and soy sauce. I also used agave syrup to make it lower in effecting glycemic index levels. Enjoy! Continue reading “Gluten Free Salad Dressing for Asian/Chinese Chicken Salad”

Guar Gum vs Xanthan

Xanthan Gum vs Guar Gum

If you have been baking gluten-free for much time, you know that these ingredients are essential in replacing gluten. Xanthan gum and guar gum powders are similar in that they both keep your ingredients together, but each has their unique ingredients, benefits, qualities and uses. You can use either, or both for the best results. Because I am asked the question so often, “What about guar gum vs xanthan gum?” – I thought I’d explain it in detail. Another wonderful celiac disease health tip from Dr. Claudia Pillow!

In most of my classes I discuss how inflammation is the underlying cause of most chronic and autoimmune disorders. But for many who suffer from diseases such as arthritis, colitis and fibromyalgia, the big question is “What triggers the inflammatory reaction in the body?” Simply, the food we eat.

Food allergies and intolerances have been implicated in a wide range of medical conditions, affecting every part of the body: from mildly uncomfortable indigestion, to embarrassing diarrhea, to severe illnesses Continue reading “What can we do to heal a leaky gut?”

Gluten Free Horns

Gluten-free Horn filled with chocolate mousse

A crisp, flaky pastry is something many people miss on a gluten free diet. I decided to create a recipe for gluten free horns because I have been wanting to test out my cream horn molds. I decided to use my gluten free quick phyllo dough recipe instead of my gluten-free cannoli shells since the cannoli shells are deep-fried and the phyllo dough may be baked. They came out crisp, golden brown, flavorful and outright delicious! Continue reading “Gluten Free Horns”

Gluten Cross-Contamination

I write this as a reference for those new to the gluten-free diet, but especially for those who have high intolerances to gluten, such as those with celiac disease and allergies to wheat. Gluten cross-contamination refers to food that has come in contact with gluten (wheat, rye and barley). However, oats are often listed as a glutenous product, though they are not when they 100% oats, because they often contain high amounts gluten. Gluten-free Grain-free Baking

Grain-free Image

I hear more and more stories from individuals who are on a gluten-free diet and/or have celiac disease, who cannot tolerate any grains whatsoever, not just gluten grains (wheat, rye, barley and contaminated oats).  They go gluten-free and grain-free! Some individuals do not fully recover on a gluten-free diet alone because they have other allergies or intolerances. Other grains contain a different type of gluten.  Some are sensitive to all forms of gluten. Continue reading “Gluten-free Grain-free Baking”
