Kellogg’s Releasing Gluten Free Rice Krispies

Kellogg's New Gluten-free Rice Krispies

Kellogg’s will be releasing a gluten free Rice Krispies. They will be keeping the original Rice Krispies and adding a gluten-free version. They state that what prompted them to move in this direction was hearing from so many gluten-free families. The gluten-free version will be made with brown rice and will be released in June 2011. Lupus Linked to Non-Celiac Gluten Intolerance

There is much controversy within the lupus community about whether a gluten-free diet helps alleviate symptoms of lupus. The medical community acknowledges that some patients with lupus can also have celiac disease (an autoimmune intolerance to gluten, the protein found in wheat, rye and barley). However, the medical community has not acknowledged a link between lupus and non-celiac gluten intolerance. Once antibodies were discovered as a way of testing for celiac disease, it opened up an entirely new way of assessing the data found in celiac disease research. Dr. Alessio Fasano, Medical Director for University of Maryland School of Medicine (update 2015 – now at the Massachusetts General Hospital), reported that, previously, doctors had to diagnose celiac disease based upon the patient’s symptoms; biopsy of the gut to confirm inflammation; and whether a gluten-free diet provided any relief. However, as is with any autoimmune disease, Dr. Fasano warns that just screening for antibodies against gluten is not a definitive diagnosis because anyone can carry this antibody who does not necessarily have celiac disease.  Celiac Disease research continues and we are learning new things every day. Learn more about celiac disease, ongoing research and about the roles of probotics and the appendix. Gluten Free Tex Mex Salad

Gluten-free Tex Mex Salad

I didn’t feel like cooking the other night and my husband suggested a large gluten-free salad.  I started with lettuce and started adding ingredients one at a time, and ended up with this wonderful Mexican salad, which I thoroughly enjoyed!  You can top it off with broken gluten-free tortilla chips.  I had some blue corn tortilla chips on hand.  It made a bit colorful, as well.  I like saving the broken chips at the bag for salad or casserole use.  Make your own and add your favorite ingredients! Fresh Watermelon Martini

I’m a sucker for anything watermelon including watermelon beverages both with or without alcohol. And a fresh watermelon martini is one of my faves, actually any melon. Martinis are naturally gluten-free, as the vodka is distilled, which most manufacturers claim removes any gluten. You will find that some vodka brands are made from wheat, rye, barley and fortunately, potatoes. I like to play it safe and use a potato vodka, but I have only tasted two, and do not care for either unless they are mixed with a lot of something sweet. Rudi’s Bakery Facebook Recipe Contest and Daily Giveaway!

On April 18, 2011 Rudi’s Bakery launched it’s Unbelievably Good Gluten-Free Recipe Contest on Facebook.  I found out about it late evening on April 19.  I suppose after sponsoring so many contests and giveaways it was time I get in on some of the fun!  I threw something together, and I didn’t even read how the recipe would judged!  I entered my Avocado Chicken Salad recipe as a sandwich, which I often make.  My recipe was approved.  Now I need to catch up with the top recipe because I am almost 2 days behind.  I’m not too far behind, though.
