On February 16, 2011, Health Canada will publish amendments to the 2008 proposed allergen labeling laws (actually, regulations), on prepackaged foods, requiring additional allergens to be disclosed.  This will highly affect those with celiac disease and gluten sensitivities, as well as those with food allergies and a sulphite sensitivity, effecting 1.75 million Canadians.  Since Canada is making many new gluten-free products, citizens from other countries may also be interested in this information.  The new regulations go into affect on August 4, 2012.  The previous regulations were published in the Canada Gazette Part I and the newer regulations will be posted in the Canada Gazette Part II.  See the summary of the changes below. Gluten Free Cranberry Nut Muffins

Gluten-free Cranberry Nut Muffins

A little red for a gluten-free Valentine’s Day recipe! These gluten-free cranberry muffins were made without nuts, but I often leave out unnecessary ingredients when testing a recipe for the first time. I am a walnut lover, among others, and really missed them in these muffins. It would have really made a better flavor. Next time I plan on adding an egg yolk, as well, just to add more yellow color. When baking with sorghum it lends more of a tan color to your baked goods, as does almond milk. Continue reading “Gluten Free Cranberry Nut Muffins”

Gluten-free Giveaway and Review: Beanitos Chips!

Beanitos Black Bean Chips

Beanitos is sponsoring this wonderful gluten-free giveaway!  Beanitos gluten-free chips are wonderful, too! If you have digestive issues there is no concern because Beanitos figured out a way of avoiding the normal gas one may get from consuming the beans in their chips. They do, however, warn us not to overeat them, as they do contain quite a bit of fiber, which can cause GI trouble.

Gluten Free Beef Faijitas

Image: Gluten Free Beef Fajitas

This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. This recipe is great when you have a craving for faijitas, but not much time for preparation. Enjoy! Continue reading “Gluten Free Beef Faijitas”

Gluten Free Stuffed Bell Peppers

Stuffed Bell Pepper

I used to make gluten free stuffed bell peppers with the same ingredients as listed below, but instead of making a smoke sauce I used to use tomato sauce. Now that I have my tomato allergies I had to get creative. I love smoked anything.  If that is the case with you, you’ll love this recipe. If not, use some tomato sauce instead. This gluten free stuffed bell peppers recipe is an easy gluten free recipe and tasty, too! Gluten-Free Steak Marsala with Onion and Mushrooms

Steak Marsala

One of my favorite entrées is chicken or veal marsala. I had the craving, but no chicken or veal in the house. Oh my!  Onto another experiment I went…and here it is, steak marsala, gluten-free, of course! After making the test recipe for just my husband and I, we had a guest over and I made it again. I hope you enjoy it as much as our guest did. She had that, “That was yummy!” and said, “That was really good!” – as if she were surprised that she enjoyed it that much. Gluten Free Baked Cheese Puff Balls

Gluten Free Cheese Puffs

I never got around to posting a recipe for Super Bowl, but I thought gluten-free cheese puffs would make a nice appetizer or snack for today’s game! This particular gluten-free cheese puffs recipe is not like the crispy snack cheese puffs, but more of a cream puff pastry. They are very light. If you wish them to be heavier, just use all butter instead of shortening and butter. I hope you enjoy them, as well as Super Bowl Sunday! Continue reading “Gluten Free Baked Cheese Puff Balls”
