 Q. What can you eat on a gluten free diet?

I began compiling this gluten free product list a few weeks ago. Though it is not completed, and never will be, I thought I would publish it before it is outdated, though I’ve included many links for you to double check. I will continue to add additional items each week as I run across them. I hope you find this list useful.

These items were gluten-free the last time I checked. Always check labels and/or with manufacturers before consuming.  Somehow all of the links disappeared from this list. I am slowly adding them back. It is always best to check links to find the latest information. In addition, many links are no longer active. Sometimes manufacturers decide that it is too great a legal liability to state which products are gluten free. Often times, ingredients change in products. Beets and Pear Salad

Gluten-Free Beet Pear Salad

This fresh beets and pear salad was a delightful change. Beets are one of the richest sources of glutamine, a detoxifying amino acid which is essential to the health of the intestinal tract, among other health benefits. Those with celiac disease, IBS and other digestive issue should benefit greatly from beets, but if you cannot digest raw fruits and vegetables well, use very ripe pears and well cooked beets; or save this recipe when you can. Safeway, Vons and Randalls Gluten-free Shelf Labels!

Safeway, Inc. introduces their SimpleNutrition program.  They have labeled their shelves with stickers which include: Gluten-free, Organic, Natural, Calorie Smart, Made with Whole Grains, Sodium Smart, etc., a total of 22 different nutrition and ingredient benefits.

Safeway has been health conscious for quite some time.  They have a few health and wellness brands such as such as OOrganics™ and Eating Right®.  They recently launched a line of natural food products, Open Nature™.  Safeway has also removed added trans fats from all of their private-label products.  The thing I like best is that they private label milk is guaranteed to be free of growth hormones.

Gluten Free Chocolate Bark Recipe

Chocolate Bark

If you are a chocolate and a nut lover like I am, you will appreciate this chocolate bark recipe because it is very heavy in the nuts, making it a more nutritious and high protein choice. The chocolate in this recipe can be adjusted to your liking. I used about 2/3 milk chocolate and 1/3 semi-sweet morsels. You can use Enjoy Life semi-sweet chocolate chips to make it gluten-free, dairy-free, peanut-free, soy free, egg free, casein-free, kosher pareve, vegan and artificial-ingredient-free. Gluten Free Fast Food

I personally stopped going to fast food restaurants, but in a pinch I needed to know what was safe. While searching for gluten-free fast food restaurants I found multiple websites with broken links to pages with allergen information and/or gluten-free menus. The links you will find below are either to a restaurant’s allergen and sensitivity charts to their gluten-free menu or list. Though most restaurants will list which items are gluten-free, some will not mention anything about cross-contamination. Please check with each restaurant before you go. And definitely educated them on how to prepare your food: washing down cutting boards (or better yet, line the board with plastic wrap, etc.), using clean utensils, etc. Though they may follow your advise if you are highly intolerant to gluten, note that the utensils and cutting boards still may contain traces of gluten. Tender Gluten Free Gourmet Boneless Beef Short Ribs – Sweet & Spicy with Wine

We were given a bit of beef recently, just when I wanted to go back to a heavier chicken diet.  How could we say no, right?  In the batch of meat, were over seven pounds of beef short ribs. I am so tired of making half the ribs in barbecue sauce in my crockpot for my husband and the other half plain because of my tomato allergies. I usually end up using a gluten-free, tomato free Worcestershire sauce. In my attempt to come up with an alternative we both can enjoy I turned to one of my favorite sauces, a balsamic reduction. Then I considered a wine sauce.  Why not combine them and add in some sugar or molasses? I had so many ribs they wouldn’t possibly fit in my small crock pot; therefore, I cooked them on the stove top. They came out so yummy, something I would expect in a fine restaurant. I won’t use any other short ribs recipe in the future.

Shirataki Noodle Soup

Shirataki Soup

Shirataki noodles (aka Shirataki Yam Noodles) are considered miracle noodles, as they are gluten-free, calorie-free and contain very little carbohydrates! They contain much glucomannan (soluble) fiber which is nature’s riches source of fiber.  Soluble fiber is suggested for prevention and alleviation of IBS symptoms. Shirataki noodles are made from the Japanese Konjac plant. They make the noodles plain or with tofu. Tofu is supposed to have a closer texture to regular pasta, but is soy based, therefore, I use the plain.  You can throw together a quick soup made with shiratki noodles and whatever else you have on hand. This soup makes a great light lunch! You can use whatever meat you desire. I used grilled chicken breast. Below you will find a brand of gluten-free tamari (soy) sauce and a non-soy based substitute.  In addition, I included a soy sauce substitute recipe!  This is one of my favorite low-calorie gluten free soup recipes. Enjoy!
